Orthodox Christians observe the Lent, during which they are not allowed to eat animal produce. However, there are two feast days, the Annunciation and the Palm Sunday, when Orthodox Christians are allowed to eat fish.
So today we’re going to offer you a couple of fish recipes. As an appetizer, you can have meatballs or rounds made of minced fish. The meatballs can be prepared using all sorts of fish. However, favorite are bigger fish with larger of fewer bones, like the cat fish.
We need one kilo of fish, two or three onions, a couple of garlic cloves, two eggs, a little bit of flour, pepper and salt. For some versions of this recipe, mashed potatoes are used. In other versions, all we have to do is use the crumb of two slices of bread. Irrespective of the version, though, never forget to use a bunch of dill. Remove the bones and peel the fish. Grind the meat and, in a bowl, mix the resulting paste with finely chopped onions, the dill, also finely chopped, slices of bread and the eggs. Add salt and pepper to taste. Add the garlic cloves, also ground, to the mix. Use your hand to homogenize the mix and to detect and remove the fish bones that may have remained in the ground mix. Use a spoon to form the meatballs, then roll them in flour before frying in a pan.
Also on the appetizers platter, aside from the spawn salad, we can include rounds cut out from a special dish the making of which takes a great deal of work and skill, namely stuffed pike. Another tasty appetizer is fish pie. For this pie you need minced fish, usually white, such as pike and zander. You also need onion and carrots, which have to be peeled and chopped finely. Saute the vegetables in butter or oil. Put the carrots and the onions in a pan and stir-fry until they get golden brown. Allow them to cool and then mix the vegetables with the minced fish. Add pepper and salt to taste. Break two eggs and add them to the mix. Homogenize the mix.
Spread the stuffing on a pastry sheet. Roll the sheets, then place the pie on a tray previously greased with a little bit of butter or oil. The pie rolls need to be greased on the upper side as well. Bake the pie at low heat for about 45 minutes, then serve. Enjoy!
