In a gastronomy almanac published over three decades ago we found a recipe for baked mushrooms and rice. You need half a kilogram of mushrooms, 100 g of butter, 200 g of hard cheese, one cup of rice, 150 g of sour cream, a bunch of parsley, as well as salt and pepper to taste. Break off the stems of the mushrooms and chop them finely, then sweat them in a couple of tablespoons of oil. Boil the rice separately, then mix it with the sauteed mushroom stems. Also mix in some grated cheese and black pepper. Take the mushroom caps and put them top down in a buttered oven tray, filling them with the rice mixture, then sprinkling grated cheese on top. Put the tray in the oven for about half an hour at medium to low heat. Put sour cream on top, with a sprinkling of chopped fresh parsley, and serve hot.<\/p>\n

One other recipe we bring you today is mushroom puree. You need half a kg of mushrooms, one cup of milk, two onions, a few slices of bread, a bit of sour cream, fresh dill, and salt. Wash the mushrooms well, slice them finely, then sweat them in a bit of oil with the chopped onions. Mince the mixture with the slices of bread soaked in the milk. Add sour cream and salt to taste, and there you have a great side dish.<\/p>\n

You can also use mushrooms for a salad. Take a kilo of small size mushrooms, wash them and blanch them. Drain them, slice them up and put them in a deep bowl. Mix well some extra virgin olive oil, lemon juice, chopped dill, with salt and pepper to taste, then mix with the mushrooms. Enjoy! <\/p>\n
