Los pepinos y los tomates crudos se conservan en salmuera, mientras que los pimientos, las berenjenas y la coliflor lo hacen en vinagre. En esta primera edici\u00f3n del programa  \u201cLos secretos de la cocina rumana\u201d, les presentaremos una manera eficaz de conservar  las hortalizas con vinagre, por separado o conjuntas, para obtener una excelente ensalada durante el invierno.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>En muchos pa\u00edses encontramos pimientos de dimensiones reducidas \u201cred cherry pepperoni\u201d  encurtidos en vinagre, que tienen al mismo tiempo un sabor dulce debido al az\u00facar a\u00f1adido durante el proceso de conservaci\u00f3n. A veces, estos pimientos se pueden rellenar de queso y sirven de entremeses. En cambio, los pimientos que se encuentran en los mercados de Ruman\u00eda son de dimensiones mayores y se tienen que cortar en tiras antes de ser conservados, retir\u00e1ndoles claro est\u00e1, las semillas y el troncho.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Para llenar de encurtidos un tarro de 10 litros, necesitamos alrededor de  5 kilos de pimientos, una coliflor de un kilo, un apio y unos cuantos  pimientos de las Indias. Igualmente se pueden a\u00f1adir pepinos, cebollas de peque\u00f1as dimensiones y berenjenas. La coliflor se dehace en peque\u00f1os ramos, el apio se corta en pedazos, igual que  el r\u00e1bano picante, que por sus cualidades antis\u00e9pticas contribuye a la mejor conservaci\u00f3n de las hortalizas. Despu\u00e9s de  colocar en el tarro todas estas hortalizas tenemos que a\u00f1adir una mezcla de vinagre  y agua, m\u00e1s exactamente, por cada  litro de vinagre hay que a\u00f1adir 2,5 litros de agua y para cada litro de agua hace falta una cucharada y media de sal y una cucharada de az\u00facar o miel de abeja.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Esta mezcla a la que a\u00f1adiremos hasta tres hojas de laurel, alrededor de 10 granos de pimienta negra y una  cucharilla de  granos de mostaza, se tiene que hervir y verter en el tarro hasta tapar  las hortalizas. Cubrimos el tarro con papel celof\u00e1n y lo dejamos a enfriar para depositarlo al final en un lugar fresco.
