En plus, comme vous allez le voir, ce n\u2019est pas une recette trop \u00e9labor\u00e9e, le temps de pr\u00e9paration en est tr\u00e8s r\u00e9duit une fois que les aubergines sont grill\u00e9es.<\/p>\n<p>&nbsp;<\/p>\n<h3>Ingr\u00e9dients<\/h3>\n<p>&nbsp;<\/p>\n<p>Pour les ingr\u00e9dients, il vous faut <strong>3 ou 4 aubergines<\/strong> ni trop grandes, ni trop petites (soit 1 kilo environ pour 3 personnes), <strong>un oignon, de l\u2019huile de tournesol et une pinc\u00e9e de sel et une cuiller\u00e9e \u00e0 soupe de mayonnaise<\/strong> selon go\u00fbt. Laver les aubergines, bien les essuyer, \u00f4ter la collerette (mais conserver le p\u00e9doncule).<\/p>\n<p>&nbsp;<\/p>\n<h3>Comment griller les aubergines<\/h3>\n<p>&nbsp;<\/p>\n<p>Les piquer \u00e0 la fourchette en 2\/3 endroits de chaque c\u00f4t\u00e9 \u2013 si vous voulez &#8211; et maintenant il existe plusieurs m\u00e9thodes de les faire griller : soit sur un grill ou en tout cas un morceau \u00e9pais de m\u00e9tal, directement sur le feu de la cuisini\u00e8re \u00e0 gaz, en les tournant tous les quarts d\u2019heure, jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient compl\u00e8tement ramollies. Soit, les disposer dans un plat \u00e0 four et les faire cuire environ 45mn, en les tournant r\u00e9guli\u00e8rement pour qu\u2019elles r\u00f4tissent sur tous les c\u00f4t\u00e9s. Si vous les enfournez, vous perdez l\u2019ar\u00f4me de fum\u00e9e que les Roumains adorent. D\u2019ailleurs, en \u00e9t\u00e9 de nombreux Roumains pr\u00e9f\u00e8rent griller leurs aubergines \u00e0 la campagne sur un barbecue \u00e0 bois afin de les conserver ensuite au cong\u00e9lateur et les consommer en hiver. Si vous disposez d\u2019un jardin et d\u2019un grill \u00e0 braises n\u2019h\u00e9sitez pas \u00e0 cuire de cette fa\u00e7on vos aubergines.<\/p>\n<p>&nbsp;<\/p>\n<h3>Utiliser des ustensiles en bois<\/h3>\n<p>&nbsp;<\/p>\n<p>Une fois grill\u00e9es, les couper en deux et les \u00e9p\u00e9piner \u00e0 l&rsquo;aide d&rsquo;une cuill\u00e8re en bois &#8211; attention, ne pas utilisez du m\u00e9tal, car on dit qu\u2019il risque de conf\u00e9rer \u00e0 la salade un petit go\u00fbt amer. Jeter ensuite la peau br\u00fbl\u00e9e. Une fois \u00e9p\u00e9pin\u00e9es, placer la chair des aubergines sur une planche inclin\u00e9e pour la laisser \u00e9goutter. Attention, cette \u00e9tape est tr\u00e8s importante, puisque le jus laiss\u00e9 par les aubergines est tr\u00e8s amer. Le mieux serait de mettre les aubergines \u00e0 d\u00e9gorger quelques heures dans une passoire, en plastique bien entendu.<\/p>\n<p>&nbsp;<\/p>\n<h3>\u00a0Huile, oignons et sel<\/h3>\n<p>&nbsp;<\/p>\n<p>Premier pas pour pr\u00e9parer la salade : \u00e9craser les aubergines \u00e0 l\u2019aide d\u2019un objet en bois : le manche en bois d\u2019un gros couteau, par exemple. Une fois de plus, le m\u00e9tal risque de rendre votre salade am\u00e8re. Mettre la chair bien \u00e9cras\u00e9e dans un saladier et commencer \u00e0 bien m\u00e9langer \u00e0 l\u2019aide d\u2019une cuill\u00e8re en bois en incorporant progressivement de l\u2019huile de tournesol. Celle d\u2019olives a un go\u00fbt trop fort pour cette salade, donc je ne vous conseille pas d\u2019en utiliser. A force de bien m\u00e9langer, vous allez obtenir une sorte de pur\u00e9e plus \u00e9paisse. Saler et go\u00fbter. A la rigueur, si le go\u00fbt d\u2019aubergine est trop fort, vous pourriez y ajouter soit une cuill\u00e8re \u00e0 soupe de mayonnaise, soit, pour une variante all\u00e9g\u00e9e, un jaune d\u2019\u0153uf cru ou du yaourt. Certains autres font cette op\u00e9ration au mixeur.<\/p>\n<p>&nbsp;<\/p>\n<h3>Touches finales<\/h3>\n<p>&nbsp;<\/p>\n<p>Eplucher un oignon, le ciseler finement ou grossi\u00e8rement selon votre go\u00fbt et l\u2019incorporer dans votre salade avant de la r\u00e9server au frais quelques heures durant. A la fin, retirer le saladier du frigo, verser la salade dans un bol, disposer tout autour des rondelles de tomate et savourer. C\u2019est une p\u00e2te \u00e0 tartiner que vous pouvez aussi mettre au cong\u00e9lateur \u2013 sans huile ni oignon, que vous ajouterez avant de servir.
