Il s\u2019agit du cochon, qui sera tu\u00e9 le 20 d\u00e9cembre lors de la Saint Ignat pour \u00eatre transform\u00e9 en une multitude de plats traditionnels incontournables pour un repas festif roumain : saucisses, boudin, aspic, p\u00e2t\u00e9, lard fum\u00e9 et feuilles de choux farcies. Evidemment une grande partie du cochon n\u2019est pas consomm\u00e9 pendant les f\u00eates de fin d\u2019ann\u00e9e et c\u2019est pourquoi le lard est conserv\u00e9 par fumage alors que les saucisses et les morceaux de viande frites sont conserv\u00e9es dans des bocaux de lard, \u00e0 la fa\u00e7on du confit. Celui-ci est utilis\u00e9 tout au long de l\u2019hiver pour enrichir toute sorte de plats \u00e0 base de pommes de terre, choux ou haricots secs.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>En Transylvanie, province historique roumaine o\u00f9 la viande de porc joue un r\u00f4le plus important, les familles paysannes tuent d\u2019habitude deux cochons, un avant No\u00ebl et un autre en d\u00e9but d\u2019ann\u00e9e. Le rituel n\u2019est pas complet sans un plat sp\u00e9cifique, appel\u00e9 \u00ab pomana porcului \u00bb, une sorte de rago\u00fbt qui est d\u2019habitude offert aux participants de cet \u00e9v\u00e9nement. Afin de prot\u00e9ger ces traditions, le d\u00e9partement de Covasna, dans le centre de la Roumanie, accueille un Festival international consacr\u00e9 \u00e0 cet \u00e9v\u00e9nement et \u00e0 ce plat, auquel ont particip\u00e9 des \u00e9quipes de Croatie, Slovaquie, Hongrie et Roumanie. Plusieurs heures durant, les \u00e9quipes pr\u00e9parent diff\u00e9rents plats \u00e0 base de viande de porc, bref un v\u00e9ritable festin.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Ce plat est tr\u00e8s n\u00e9cessaire vu le laborieux travail que constitue le d\u00e9coupage du cochon, qui se fait \u00e0 la campagne en plein air, sous les caprices de la m\u00e9t\u00e9o du mois de d\u00e9cembre. Sachez que d\u2019une r\u00e9gion roumaine \u00e0 l\u2019autre, d\u2019une ville \u00e0 une autre, le cochon tu\u00e9 est accompagn\u00e9 par toute une s\u00e9rie de rituels et de r\u00e8gles et donne en quelque sorte le coup d\u2019envoi \u00e0 la p\u00e9riode des f\u00eates d\u2019hiver.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Pour le pr\u00e9parer il vous faut une marmite en fonte dans laquelle vous mettrez un peu de lard \u00e0 feu moyen. Coupez des morceaux de viande et notamment de poitrine et mettez-les dans la marmite, avec quelques morceaux de foie et laissez dorer un peu. Ajoutez-y un peu d\u2019eau ou de vin et laissez mijoter pendant une demi-heure remuant de temps en temps. D\u00e9cortiquer une t\u00eate d\u2019ail et \u00e9craser les gousses avant de les jeter dans la casserole. Vers la fin parsemez le plat de thym, de poivre et salez. Ce plat est servi accompagn\u00e9 de polenta et d\u2019un ou plusieurs verres de vin rouge. Son effet r\u00e9confortant est garanti s\u2019il est consomm\u00e9 en plein air, accompagn\u00e9 d\u2019une tasse d\u2019eau-de-vie de fruits chaude, notamment de prunes. Bon app\u00e9tit !
