La cuisine du terroir est celle moldave, mais elle contient aussi quelques influences autrichiennes, puisque la r\u00e9gion a fait l\u2019objet de l\u2019administration imp\u00e9riale de Vienne entre 1775 et 1918. La cr\u00e8me fra\u00eeche est utilis\u00e9e assez souvent pour enrichir diff\u00e9rentes potages de l\u00e9gumes \u00e0 la viande de b\u0153uf ou les soupes de poulet aux tagliatelles  maison.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Aujourd\u2019hui je vous propose de pr\u00e9parer une innovation de la gastronomie de Bucovine : la ciorba \u00e0 la Radauti, un potage acide \u00e0 base de viande de poulet. Dans les ann\u00e9es 1970, une cuisini\u00e8re de la ville de Radauti, dans le nord du pays a modifi\u00e9 la ciorba de tripes, un plat que l\u2019on peut go\u00fbter dans presque les tous restaurants de Roumanie pour l\u2019all\u00e9ger et le rendre encore plus appr\u00e9ci\u00e9 par les Roumains. Pour pr\u00e9parer cette ciorba, il vous faut 4 cuisses de poulet ou deux blancs de poulet, 2 racines de persil, 3 carottes, un poivron, 3 ou 4 jaunes d\u2019\u0153uf, du vinaigre, quelques gousses d\u2019ail, des feuilles de persil frais et environ 400 grammes de cr\u00e8me fra\u00eeche. Mettez la viande et les l\u00e9gumes dans une casserole avec trois litres d\u2019eau et faites cuire pendant une heure, une heure et demi. Emincez ensuite la viande et les l\u00e9gumes et portez de nouveau \u00e0 \u00e9bullition. M\u00e9langez les jaunes d\u2019\u0153uf et la cr\u00e8me et ajoutez-les \u00e0 la soupe juste apr\u00e8s avoir \u00e9teint le feu. Ajoutez aussi du vinaigre selon votre go\u00fbt, les gousses d\u2019ail \u00e9cras\u00e9es, du sel et poivre du moulin ainsi que le persil finement hach\u00e9.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Et nous poursuivons ce menu compos\u00e9 de plats plut\u00f4t l\u00e9gers mais enrichis de cr\u00e8me fra\u00eeche avec une truite \u00e0 la sauce cr\u00e9meuse. Nettoyez, lavez et salez une truite avant de la mettre sur le grill ou dans le four jusqu\u2019\u00e0 ce qu\u2019elle soit bien dor\u00e9e sur ses deux c\u00f4t\u00e9s. Coupez en brunoise un gros oignon et faites sauter dans un peu d\u2019huile \u00e0 feu moyen. R\u00e9duisez le feu  avant d\u2019ajouter 200 grammes de cr\u00e8me fra\u00eeche, quelques gousses d\u2019ail et un m\u00e9lange d\u2019herbes : persil, estragon et aneth, finement hach\u00e9es. M\u00e9langez bien et laissez mijoter pendant une minute avant de couper compl\u00e8tement le feu. Ce plat peut \u00eatre accompagn\u00e9 de polenta et d\u2019une superbe salade de champignons saumur\u00e9es, par exemple. Histoire d\u2019\u00e9quilibrer la graisse de la cr\u00e8me. Et pour le dessert, sachez que la Bucovine est renomm\u00e9e aussi pour ses viennoiseries notamment aux fruits des bois, une sp\u00e9cialit\u00e9 locale d\u2019inspiration autrichienne.
