D\u00e9tails tout de suite.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Apr\u00e8s un hiver long et capricieux, les Roumains ont envie de manger des plats riches en vitamines et min\u00e9raux. C\u2019est pourquoi pendant les mois de mars et d\u2019avril les vedettes des march\u00e9s du pays sont les \u00e9pinards et les orties, deux plantes que je vous invite \u00e0 utiliser pour pr\u00e9parer des plats v\u00e9g\u00e9tariens, puisque pour les Roumains orthodoxes, le grand car\u00eame a d\u00e9j\u00e0 commenc\u00e9.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>La premi\u00e8re recette est celle d\u2019un riz pilaf aux \u00e9pinards. Pour la pr\u00e9parer il vous faut : 200 grammes de riz, un gros oignon, 3-4 gousses d\u2019ail, 2 ou 3 cuill\u00e8res d\u2019huile, du sel et poivre et \u00e9videmment environ 300 grammes d\u2019\u00e9pinards cuits, c\u2019est \u00e0 dire environ un kilo d\u2019\u00e9pinards frais. Lavez bien les \u00e9pinards, feuille par feuille, et d\u00e9barrassez-les des nervures centrales qui sont souvent tr\u00e8s fibreuses. Faites blanchir les \u00e9pinards dans de l\u2019eau sal\u00e9e. Portez donc \u00e0 \u00e9bullition, puis enlevez les feuilles avec une \u00e9cumoire et plongez-les dans de l\u2019eau froide, pour qu\u2019elles gardent leur couleur verte. Passez les \u00e9pinards par une essoreuse \u00e0 salade pour retirer en douceur le maximum deau. Dans une casserole moyenne sautez l\u2019oignon coup\u00e9 en brunoise dans un peu d\u2019huile, puis ajoutez le riz et m\u00e9langez bien. Ensuite ajoutez trois fois la quantit\u00e9 d\u2019eau et les \u00e9pinards hach\u00e9s ou pass\u00e9s au mixeur plongeant. Salez et poivrez. Laissez cuire jusqu\u2019\u00e0 ce que les grains de riz sont plut\u00f4t tendres, ajoutez de l\u2019eau si besoin est, puisque le pilaf roumain n\u2019a pas la m\u00eame texture que le risotto italien.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Passons maintenant au deuxi\u00e8me ingr\u00e9dient vert de cette \u00e9mission : les orties, dont la pr\u00e9paration est tr\u00e8s similaire \u00e0 celle des \u00e9pinards. Choisissez notamment des feuilles tendres qu\u2019il faut laver et d\u00e9barrasser de tiges. Faites-les blanchir dans de l\u2019eau sal\u00e9e et puis passez-les par une essoreuse. Pour pr\u00e9parer un pur\u00e9e d\u2019orties \u00e0 l\u2019ail il vous faut donc : un kilo d\u2019orties fra\u00eeches, une t\u00eate d\u2019ail, trois cuiller\u00e9es d\u2019huile d\u2019olive, un gros oignon et un litre d\u2019eau ou mieux un litre de bouillon de l\u00e9gumes.  <\/p>\n<p>&#13;<br \/>\n&#13;<br \/>\n &#13;<br \/>\n&#13;<\/p>\n<p>Coupez en brunoise l\u2019oignon et sautez-le dans un peu d\u2019huile d\u2019olives. Ajoutez une cuill\u00e8re de farine de bl\u00e9 et m\u00e9langez bien avec un fouet. Ajoutez les orties pass\u00e9es au et mixeur plongeur ajoutez de l\u2019eau ou du bouillon de l\u00e9gumes, jusqu\u2019\u00e0 ce que le m\u00e9lange devient une sorte de pur\u00e9e moelleuse. Ajoutez de l\u2019ail \u00e9cras\u00e9, salez et poivrez. Vous pouvez \u00e9galement enfourner pendant une vingtaine de minutes, un d\u00e9lai suffisant pour pr\u00e9parer un peu de polenta en accompagnement.
