Et pourtant depuis plusieurs ann\u00e9es, l\u2019arriv\u00e9e des l\u00e9gumes surgel\u00e9s a rendu ce plat plus accessible. Pourtant, vu que le go\u00fbt et la saveur des l\u00e9gumes frais est irrempla\u00e7able, il vaut mieux patienter un peu et utiliser les l\u00e9gumes de saison.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Pour pr\u00e9parer un \u00ab ghiveci \u00bb il vous faut environ 200 grammes de haricots verts ou jaunes, 300 grammes de chou-fleur, une courgette moyenne, deux poivrons rouges, une carotte, deux gros oignons, trois ou quatre pommes de terre, une aubergine et environ 100 grammes de coulis de tomates ou une petite conserve de tomates hach\u00e9es, quelques cuill\u00e8res d\u2019huile, sel et poivre.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Lavez les l\u00e9gumes et coupez-les en rondelles ou en quartiers d\u2019environ deux ou trois centim\u00e8tres. Faites bouillir les haricots dans de l\u2019eau sal\u00e9e pendant trois minutes, puis plongez-les dans de l\u2019eau froide, voire glac\u00e9e, afin d\u2019arr\u00eater la cuisson et de garder une texture plut\u00f4t ferme &#8211; \u00ab al dente \u00bb comme disent les Italiens. Faites de m\u00eame avec le chou-fleur. Utilisez une po\u00eale anti-adh\u00e9sive pour faire fondre dans de l\u2019huile la courgette, l\u2019aubergine et les poivrons. Dans une casserole plut\u00f4t grande qui va au four, faites sauter la carotte, les oignons coup\u00e9s en julienne et les pommes de terre. Apr\u00e8s quelques minutes ajoutez les l\u00e9gumes saut\u00e9s &#8212; courgette, aubergine, poivrons &#8211; ainsi que les haricots et le chou-fleur et m\u00e9langez, en faisant attention \u00e0 ne pas les \u00e9craser. Ajoutez le coulis de tomates ou les tomates hach\u00e9es et recouvrez d\u2019eau.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Laissez mijoter \u00e0 feu l\u00e9ger pendant une quarantaine de minutes, avant de mettre au four pendant une demi heure. Quelques minutes avant de sortir le \u00ab ghiveci \u00bb du four, ajoutez-y quatre ou cinq gousses d\u2019ail \u00e9cras\u00e9es. Avant de servir, parsemez de feuilles de persil ou de c\u00e9leri finement hach\u00e9es, pour obtenir un parfum unique.
