Et maintenant, passons \u00e0 la pr\u00e9paration. Avant de me suivre dans la cuisine, sachez que pour faire ce plat d&rsquo;une difficult\u00e9 moyenne, il vous faudrait environ deux heures et demie au total pour la pr\u00e9paration et la cuisson.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Et maintenant, au boulot : commencez par plonger les abats dans de l&rsquo;eau froide et laissez-les tremper une heure environ pour enlever les traces de sang. Dans une marmite faites bouillir les organes de l&rsquo;agneau dans de l&rsquo;eau sal\u00e9e et \u00e9cumez soigneusement. Entre temps, dans une autre casserole remplie d&rsquo;eau froide, faites bouillir de l&rsquo;eau additionn\u00e9e d&rsquo;une pinc\u00e9e de sel et d&rsquo;un filet de vinaigre (qui servira \u00e0 coaguler le blanc en cas de fissure de la coquille). D\u00e8s l&rsquo;\u00e9bullition, plongez d\u00e9licatement les oeufs \u00e0 l&rsquo;aide d&rsquo;une \u00e9cumoire ou d&rsquo;une cuill\u00e8re \u00e0 soupe. Faites-les cuire 10 min chrono (n&rsquo;attendez surtout pas la reprise de l&rsquo;\u00e9bullition pour commencez le compte \u00e0 rebours). Une fois ce temps \u00e9coul\u00e9, sortez les oeufs et plongez-les dans de l&rsquo;eau tr\u00e8s froide, afin d&rsquo;arr\u00eater la cuisson. Hachez finement oignons, persil et aneth. Quand les abats sont cuits, sortez-les de leau et laissez-les refroidir avant de les \u00e9mincer. Mettez les abats dans un bol, ajoutez le persil, loignon, laneth, la tranche de pain tremp\u00e9e au pr\u00e9alable dans du lait et les \u0153ufs crus. Salez, poivrez et m\u00e9langez bien. Bien laver la cr\u00e9pine. Enduire d&rsquo;huile une casserole \u00e0 bords peu relev\u00e9s. Y ranger la cr\u00e9pine de mani\u00e8re \u00e0 ce qu&rsquo;elle d\u00e9passe les bords et puisse \u00eatre rabattue vers l&rsquo;int\u00e9rieur. Verser dessus une couche de composition, ranger les quatre \u0153ufs durs et les couvrir du reste de la composition en prenant bien soin d&rsquo;obtenir une couche uniforme. Rabattre soigneusement les bords de la cr\u00e9pine pour la recouvrir. Faire cuire au four \u00e0 feu moyen une quarantaine de minutes.
