Il sagit dune sorte de rago\u00fbt de viande de porc aux cornichons saumur\u00e9s, soit un m\u00e9lange de saveurs et de go\u00fbts assez inattendu.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Pour le pr\u00e9parer il vous faut un demi-kilo de viande de porc coup\u00e9e en cubes denviron 2 ou 3 centim\u00e8tres de c\u00f4t\u00e9, mais vous pouvez utiliser aussi de la viande de b\u0153uf ou dagneau. Pour lautre ingr\u00e9dient principal, aucune exception nest permise : il vous faut environ 500 grammes de cornichons en saumure, pas au vinaigre. Ces conserves, les Roumains les pr\u00e9parent aussi en \u00e9t\u00e9, notamment en raison de la simplicit\u00e9 de la recette. Remplissez de cornichons et de tiges daneth s\u00e9ch\u00e9e un bocal moyen denviron 3 kilos, puis versez une saumure faite deau bouillante et de sel. La proportion est dune cuill\u00e8re de sel par litre deau. Recouvrez le bocal dun chiffon et laissez-le dans un endroit ensoleill\u00e9.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Au bout de cinq jours environ, les cornichons sont pr\u00eats \u00e0 \u00eatre consomm\u00e9s tels quels ou dans un rago\u00fbt. Vous avez \u00e9galement besoin de deux oignons, de 200 ml de jus de tomates, dune botte daneth, dune cuill\u00e8re de thym, de deux feuilles de laurier et dun peu de farine. Coupez les oignons en julienne et faites-les dorer dans une casserole avec un peu dhuile. Ajoutez aussi les morceaux de viande et faites-les dorer de tous les c\u00f4t\u00e9s. Ajoutez ensuite la farine et recouvrez le tout deau bouillante. Laissez mijoter pendant une vingtaine de minutes.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Coupez les cornichons en rondelles et rincez-les deau froide avant de les mettre dans la casserole. Cette op\u00e9ration est extr\u00eamement importante parce quelle sert \u00e0 r\u00e9gler la quantit\u00e9 de sel que lon y met. Dailleurs, en raison de la pr\u00e9sence des cornichons saumur\u00e9s, il ne faut plus utiliser de sel. Versez ensuite le jus de tomates et ajoutez les herbes s\u00e9ch\u00e9es et les condiments. Laissez mijoter pendant une autre demi-heure puis parsemez daneth finement hach\u00e9.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Vous pouvez jouer avec les ar\u00f4mes et ajouter plus de paprika par exemple afin dobtenir un go\u00fbt sal\u00e9 \u2013 aigre \u2013 piment\u00e9, ou bien mieux dessaler les cornichons afin dobtenir un plat plut\u00f4t aigre \u2013 doux. En tout cas le rago\u00fbt aux cornichons en saumure saccompagne \u00e0 merveille dune belle polenta roumaine et dun vin de campagne rouge et frais.
