Et c\u2019est pr\u00e9cis\u00e9ment une zacusca aux champignons que je vous propose de pr\u00e9parer aujourd\u2019hui.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Il vous faut 10 kilos d\u2019aubergines, 10 kilos de poivrons rouges, 10 kilos de poivrons tomate, 5 kilos de champignons, 3 litres de jus de tomates, 2 litres d\u2019huile de tournesol, 3 kilos d\u2019oignons, sel et poivre et une dizaine de feuilles de laurier. Grillez et \u00e9pluchez les aubergines et les poivrons. Laissez-les s\u00e9cher dans une passoire. Faites bouillir les champignons et coupez-les en cubes d\u2019environ 5 mm de c\u00f4t\u00e9. Coupez les oignons en julienne et faites-les dorer dans de l\u2019huile \u00e0 feu moyen. Hachez les poivrons et les aubergines \u00e0 l\u2019aide d\u2019un hachoir manuel ou dans le robot de cuisine. Rabaissez le feu et mettez les l\u00e9gumes, les champignons et le jus de tomates dans la marmite et m\u00e9langez lentement. Ajoutez les feuilles de laurier, salez et poivrez. N\u2019oubliez pas de m\u00e9langer tout les 10 minutes, pour que la zacusca ne colle pas au fond du r\u00e9cipient, qui peut non seulement une marmite, mais aussi une casserole en inox \u00e0 fond \u00e9pais.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Prenez des bocaux en verre et mettez-les dans le four \u00e0 100 degr\u00e9s. Faites bouillir leurs couvercles dans de l\u2019eau pendant quelques minutes. Ces deux op\u00e9rations sont n\u00e9cessaires pour st\u00e9riliser les r\u00e9cipients dans lesquels la zacusca sera pr\u00e9serv\u00e9e pendant plusieurs mois. Mettez la zacusca chaude dans les bocaux et fermez-les avant de les mettre au four pour quelques minutes \u00e0 100 degr\u00e9s. Laissez les bocaux refroidir jusqu\u2019au lendemain avant de les mettre dans un endroit frais \u00e0 temp\u00e9rature constante.
