{"id":429327,"date":"2014-09-05T14:26:00","date_gmt":"2014-09-05T11:26:00","guid":{"rendered":"http:\/\/devrri.freshlemon.ro\/le-roumain-mot-a-mot\/consulter-les-lecons\/zacusca-au-poisson-id429327.html"},"modified":"2014-09-05T14:26:00","modified_gmt":"2014-09-05T11:26:00","slug":"zacusca-au-poisson","status":"publish","type":"post","link":"https:\/\/www.rri.ro\/fr\/nos-emissions\/le-plat-du-jour\/zacusca-au-poisson-id429327.html","title":{"rendered":"Zacusca au poisson"},"content":{"rendered":"<p>Aujourd\u2019hui je vous propose de faire un nouveau voyage dans le delta du Danube pour d\u00e9couvrir une recette de zacusca au poisson, une vari\u00e9t\u00e9 de ce rago\u00fbt cr\u00e9meux d\u2019aubergines et de poivrons grill\u00e9s que les Roumains pr\u00e9parent en d\u00e9but d\u2019automne et consomment en tant que conserves tout au long de l\u2019hiver.   <\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Comme d\u2019habitude, nous commen\u00e7ons par les ingr\u00e9dients. Il vous faut environ trois kilos de poisson, un peu plus gras : carpe, silure, sandre. Sachez qu\u2019en automne la chair des poissons contient plus de graisses parce que ceux-ci accumulent des r\u00e9serves afin de survivre pendant l\u2019hiver.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Il vous faut aussi un litre, un litre et demi de jus de tomates, 6 kilos de poivrons rouges, 3 kilos de carottes, 3 kilos d\u2019oignons, un litre d\u2019huile, quelques feuilles de laurier, 5 ou 6 grains de piment de la Jama\u00efque, thym, basilic, sel et poivre.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Faites griller les poivrons sur le grill \u00e0 charbon, dans le four ou bien sur un grill en fonte pos\u00e9 sur la table \u00e0 cuisson. Laissez les poivrons reposer dans une casserole avant de les parsemer de sel. Puis \u00e9pluchez-les et hachez-les au couteau ou bien au robot de cuisine. Coupez les oignons en julienne et les carottes en brunoise. Nettoyez le poisson, \u00e9caillez-le et videz-le sans oublier de lui enlever les ou\u00efes.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Faites bouillir le poisson dans de l\u2019eau sal\u00e9e jusqu\u2019\u00e0 ce que la chair puisse \u00eatre facilement s\u00e9par\u00e9e des os. Pour pr\u00e9parer la zacusca de poisson, je vous recommande d\u2019utiliser une grosse marmite en fonte. Mais vous pouvez \u00e9galement employer une grosse casserole \u00e0 fond \u00e9pais.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Faites dorer les oignons et les carottes dans de l\u2019huile \u00e0 feu moyen, puis ajoutez un peu de bouillon de poisson, les poivrons, le jus de tomates, et les \u00e9pices: feuilles de laurier, thym, basilic et piment de la Jama\u00efque. Salez et poivrez. Vous pouvez \u00e9galement ajouter quelques piments rouges si vous voulez. M\u00e9langez bien avant d\u2019ajouter les morceaux de chair de poisson. Rabaissez le feu et laissez mijoter pendant une quarantaine de minutes &#8212; une heure, o\u00f9 jusqu\u2019\u00e0 ce que l\u2019huile commence \u00e0 s\u2019accumuler \u00e0 la surface. Evidemment n\u2019oubliez pas de m\u00e9langer de temps en temps pour que la zacusca ne colle pas au fond de la casserole.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Pour la conserver utilisez des bocaux \u00e0 couvercle m\u00e9tallique que vous devez st\u00e9riliser dans le four. Les couvercles, vous pouvez les tremper dans de l\u2019eau bouillante. Mettez la zacusca chaude dans les bocaux, ajoutez un peu d\u2019huile juste avant de refermer les couvercles. Mettez les bocaux dans le four \u00e0 100 degr\u00e9s pour quelques minutes, puis coupez le feu et laissez-les refroidir jusqu\u2019au lendemain. Comme toute conserve, vous pouvez les pr\u00e9server dans un endroit frais comme une cave \u00e0 vin par exemple pendant plusieurs mois.
