{"id":429461,"date":"2014-11-03T14:14:00","date_gmt":"2014-11-03T12:14:00","guid":{"rendered":"http:\/\/devrri.freshlemon.ro\/le-roumain-mot-a-mot\/consulter-les-lecons\/la-ciorba-de-perisoare-id429461.html"},"modified":"2014-11-03T14:14:00","modified_gmt":"2014-11-03T12:14:00","slug":"la-ciorba-de-perisoare","status":"publish","type":"post","link":"https:\/\/www.rri.ro\/fr\/nos-emissions\/le-plat-du-jour\/la-ciorba-de-perisoare-id429461.html","title":{"rendered":"La \u00ab\u00a0ciorba de peri\u015foare\u00a0\u00bb"},"content":{"rendered":"<p>Aujourd\u2019hui, je vous propose de pr\u00e9parer un plat culte en Roumanie : la ciorba de perisoare, le potage aux boulettes de viande.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Pour le pr\u00e9parer il vous faut 3 grosses tomates hach\u00e9es, une courgette, un c\u00e9leri rave, 2 poivrons rouges, une grosse carotte, 2 oignons, un gros os de b\u0153uf, un demi litre de bortsch, une botte de persil et une autre de liv\u00e8che. Rappelons-le, le bortsch est un condiment traditionnel roumain obtenu par la fermentation du son de bl\u00e9. Le bortsch peut \u00eatre pr\u00e9par\u00e9 \u00e0 la maison, mais comme sa pr\u00e9paration est fastidieuse, on peut en trouver dans le commerce, mis en bouteille ou en sachet d\u00e9shydrat\u00e9.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Pour les boulettes de viande il vous faut un demi kilo de viande de b\u0153uf hach\u00e9e, (il vous faut notamment de la viande plut\u00f4t maigre puisque les graisses rendent plus difficile la formation des boulettes) un ou deux \u0153ufs entiers, un peu de persil hach\u00e9, un oignons finement hach\u00e9, une centaine de gramme de riz blanc, un peu de paprika, du sel et du poivre du moulin. Dans une casserole plut\u00f4t grande, faites bouillir l\u2019os de b\u0153uf dans environ 5 litres d\u2019eau tout en \u00e9cumant de temps en temps, jusqu\u2019\u00e0 ce que l\u2019\u00e9cume ne se forme plus. Entre temps, coupez les carottes, le c\u00e9leri rave et  deux oignons en brunoise et faites-les dorer dans un peu d\u2019huile de tournesol dans une casserole antiadh\u00e9sive. Mettez ensuite ces l\u00e9gumes dans le bouillon de b\u0153uf et ajoutez-y la courgette coup\u00e9e en cubes, les tomates hach\u00e9es et les poivrons rouges \u00e9minc\u00e9s. Laissez cuire \u00e0 feu moyen pendant une trentaine de minutes, le temps de former les boulettes de viande.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>M\u00e9langez la viande hach\u00e9e, l\u2019\u0153uf, le riz et l\u2019oignon coup\u00e9e en brunoise. Salez, poivrez et ajoutez un peu de persil finement hach\u00e9 et un peu de paprika. Trempez vos mains dans de l\u2019eau froide et formez des boulettes de viande d\u2019environ deux centim\u00e8tres de diam\u00e8tre que vous mettez ensuite dans la soupe en \u00e9bullition. Au moment ou les boulettes refont surface, sachez qu\u2019elles sont bien cuites. C\u2019est le moment de mettre le bortsch.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Laissez la ciorba \u00e0 feu moyen pendant une autre dizaine de minutes, puis coupez le feu et ajoutez la liv\u00e8che et le persil finement hach\u00e9s. Vous pouvez rajouter du bortsch si vous pr\u00e9f\u00e9rez la ciorba plus acide ou bien de la cr\u00e8me fra\u00eeche, afin de lui donner une texture plus fine. Sachez que les Roumains consomment aussi au moins un piment rouge ou vert et un verre d\u2019eau de vie par assiette de ciorba.
