Le bortsch peut \u00eatre pr\u00e9par\u00e9 \u00e0 la maison, mais comme sa pr\u00e9paration est fastidieuse, on peut en trouver dans le commerce, mis en bouteille ou en sachet d\u00e9shydrat\u00e9. Laissez les haricots blancs secs dans de leau pendant plusieurs heures ou bien pendant une nuit. Puis dans de leau sal\u00e9e portez les haricots blancs \u00e0 l\u00e9bullition, ensuite jetez leau et mettez-les bouillir \u00e0 nouveau. R\u00e9p\u00e9tez cette op\u00e9ration \u00e0 deux ou trois reprises, puis laissez bouillir jusqu\u00e0 ce que les haricots soient bien cuits.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Entre temps, coupez les lardons fum\u00e9s en d\u00e8s et faites les dorer dans de lhuile dans une po\u00eale anti-adh\u00e9sive aux c\u00f4t\u00e9s des carottes coup\u00e9es en brunoise et loignon coup\u00e9 en julienne. Ajoutez ces ingr\u00e9dients dans la casserole \u00e0 soupe o\u00f9 se trouvent d\u00e9j\u00e0 les haricots. Laissez bouillir \u00e0 feu moyen pendant une autre dizaine de minutes puis ajoutez les tomates et les autres l\u00e9gumes coup\u00e9s en brunoise.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Apr\u00e8s une autre demi heure, ajoutez les tomates, le persil finement hach\u00e9, de lestragon, salez et poivrez. Versez dans la soupe le bors et coupez le feu apr\u00e8s une autre vingtaine de minutes. Traditionnellement, la soupe de haricots blancs est servie accompagn\u00e9e dune salade doignons rouges ou mise dans un bol creus\u00e9 dans un pain &#8211; une astuce locale tr\u00e8s appr\u00e9ci\u00e9e en Roumanie.
