D&rsquo;ailleurs, cet ingr\u00e9dient se retrouve dans presque tous les plats vedette du repas de No\u00ebl. On pr\u00e9pare saucisses, p\u00e2t\u00e9, boudin, aspic, feuilles de choux farcies et r\u00f4ti. L&rsquo;aspic de porc, ou la \u00ab\u00a0<strong>piftia<\/strong>\u00a0\u00bb en Roumain, fait partie dune cat\u00e9gorie de mets appel\u00e9s \u00ab racituri \u00bb, litt\u00e9ralement \u00ab choses froides \u00bb ou \u00ab aituri \u00bb, cest \u00e0 dire plats qui contiennent de l&rsquo;ail.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Relativement simple \u00e0 pr\u00e9parer, l&rsquo;aspic de porc demande pourtant du temps et de la patience afin d&rsquo;obtenir des r\u00e9sultats de qualit\u00e9. Il vous faut d&rsquo;abord un jarret et six pieds de cochon frais avec couenne. Il faut aussi 2 gros oignons, 3 carottes, 3 feuilles de laurier, une t\u00eate d&rsquo;ail, des grains de poivre et du sel.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Mettez la viande \u00e0 cuire dans environ 8 litres d&rsquo;eau froide \u00e0 feu doux. N&rsquo;oubliez pas d&rsquo;\u00e9cumer souvent afin de garder le bouillon clair. Faites cuire la viande pendant deux heures, deux heures et demi, ou bien jusqu&rsquo;\u00e0 ce quelle commence \u00e0 se d\u00e9tacher des os. Laissez reposer dans la m\u00eame casserole jusqu&rsquo;au lendemain lorsque vous devez enlever les graisses accumul\u00e9es en surface.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Vous pouvez pr\u00e9parer l&rsquo;aspic en une seule journ\u00e9e \u00e0 condition d&rsquo;essayer de d\u00e9graisser le bouillon durant sa pr\u00e9paration. Certaines familles choisissent d&rsquo;enlever le gras seulement avant de servir l&rsquo;aspic. Bref, apr\u00e8s avoir d\u00e9graiss\u00e9 le bouillon, mettez-le \u00e0 nouveau sur le feu. Ajoutez l&rsquo;oignon, les carottes, les feuilles de laurier et les grains de poivre et laissez mijoter pendant une autre quarantaine de minutes. Coupez le feu. \u00c9crasez l&rsquo;ail et mettez-le dans la casserole. Retirez la viande et laissez-la reposer un peu. Enlevez les os, coupez la couenne en lamelles et mettez la viande et la couenne dans des bols \u00e0 soupe. Utilisez une passoire fine pour s\u00e9parer le bouillon des autres ingr\u00e9dients, afin d&rsquo;obtenir un liquide clair. Salez avant de le verser dans les bols.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>Gardez les bols au frais jusqu&rsquo;au moment du repas. Faites attention \u00e0 ce que laspic ne g\u00e8le pas puisque sa solidification deviendrait impossible. Ce met est servi froid, en entr\u00e9e, directement dans le bol o\u00f9 il a \u00e9t\u00e9 mont\u00e9, ou bien renvers\u00e9, parsem\u00e9 de paprika ou dune sauce au raifort ou bien avec de la moutarde forte. Comme boisson associ\u00e9e, l&rsquo;eau de vie de prunes est la meilleure solution.
