Aujourd\u2019hui, je vous propose de pr\u00e9parer le plat principal de tout repas festif local : le r\u00f4ti de porc, celui qui s\u2019av\u00e8re le point d\u2019orgue de ce v\u00e9ritable marathon culinaire.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Apr\u00e8s un d\u00e9but de repas d\u00e9j\u00e0 copieux form\u00e9 d\u2019entr\u00e9es (boudin, p\u00e2t\u00e9, aspic, salade russe \u00e0 la viande de b\u0153uf etc.) et d\u2019un premier plat qui est normalement constitu\u00e9 de \u00ab\u00a0sarmale\u00a0\u00bb (des feuilles de choux farcies), le r\u00f4ti doit vraiment impressionner du point de vue visuel pour que les convives puissent encore le d\u00e9guster. C\u2019est pourquoi les m\u00e8res de famille choisissent d\u2019imaginer toute sorte de roulades ou de tissages de filet mignon et de saucisses. C\u2019est pr\u00e9cis\u00e9ment une roulade de porc que je vous propose de pr\u00e9parer aujourd\u2019hui.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Pour la pr\u00e9parer, il vous faut environ un demi-kilo de filet ou de carr\u00e9 de porc, 200 grammes de saucisses de porc, 150 grammes de champignons de Paris, 10 grammes de lardons fum\u00e9s, 100 grammes de fromage du type \u00ab\u00a0cascaval\u00a0\u00bb, une sorte d\u2019emmenthal ou de gruy\u00e8re plus sal\u00e9, un petit oignon, un ou deux \u0153ufs entiers, 50 grammes de chapelure, 50 grammes de coulis de tomates, une botte d\u2019aneth, un peu d\u2019huile d\u2019olives, du thym, du sel et du poivre du moulin.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Coupez le filet de porc en longueur et aplatissez-le \u00e0 l\u2019aide d\u2019un marteau attendrisseur de viande. Coupez l\u2019oignon en julienne et mettez-le dans une po\u00eale avec un peu d\u2019huile \u00e0 feu moyen. Ajoutez-y les champignons et l\u2019aneth. Coupez le feu, salez, poivrez et laissez reposer cette farce pendant une bonne quinzaine de minutes. Mettez-y l\u2019\u0153uf, les lardons fum\u00e9s, coup\u00e9s en cubes, et le fromage r\u00e2pe. Les saucisses vous pouvez les ajouter \u00e0 cette farce coup\u00e9es en morceaux ou bien vous pouvez poser la farce sur la viande et la rouler ensuite autour des saucisses enti\u00e8res. Utilisez de la ficelle de cuisine pour bien lier la roulade.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Recouvrez-la de thym, de sel de mer et de chapelure et puis posez-la dans un r\u00e9cipient qui va au four avec un peu d\u2019huile. Arrosez-la avec le jus de cuisson qui s\u2019accumule dans la cocotte et avec du vin rouge au cas o\u00f9 celui-ci s\u2019\u00e9vapore. Au milieu de la cuisson, vous pouvez verser le coulis de tomates sur la roulade, tout en continuant \u00e0 l\u2019arroser avec le jus de cuisson ou avec du vin. Apr\u00e8s une bonne heure de cuisson \u00e0 180 degr\u00e9s, la roulade est pr\u00eate \u00e0 \u00eatre savour\u00e9e. Vous pouvez la v\u00e9rifier avec un thermom\u00e8tre \u00e0 viande. D\u00e9coup\u00e9e en tranches, la roulade de porc peut \u00eatre accompagn\u00e9e de l\u00e9gumes saumur\u00e9es et d\u2019un bon verre de vin rouge, par exemple un \u00ab\u00a0Feteasca neagra\u00a0\u00bb.
