Cette pr\u00e9cision est tr\u00e8s importante puisque d\u2019un c\u00f4t\u00e9 l\u2019os aide \u00e0 amplifier l\u2019ar\u00f4me et de l\u2019autre, la viande qui se trouve sur ces os est assez tendre. Elle deviendra m\u00eame plus tendre suite \u00e0 la cuisson. Il vous faut aussi quatre racines de persil, un ou deux oignons, une petite t\u00eate de c\u00e9leri rave, un chou rave, cinq ou six carottes et deux pommes de terre. Pr\u00e9voyez aussi cinq grosses tomates, une cuiller\u00e9e de paprika doux et une de sel, du poivre du moulin et 150 millilitres de bors, quelques feuilles de persil, de c\u00e9leri et de liv\u00e8che. Rappelons-le, le bortch est un liquide utilis\u00e9 comme condiment qui r\u00e9sulte de la fermentation du son de bl\u00e9. Vous pouvez en trouver dans sa version liquide ou en sachet d\u00e9shydrat\u00e9 chez les traiteurs roumains.   <\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Dans une grande casserole \u00e0 soupe, faites bouillir de l\u2019eau sal\u00e9e avec quelques graines de poivre. Mettez la viande dans l\u2019eau en \u00e9bullition et retirez-la apr\u00e8s trois minutes environ. Jetez l\u2019eau, lavez la casserole et faites bouillir \u00e0 nouveau environ 5 litres d\u2019eau. Remettez-y la viande et laisser bouillir \u00e0 feu moyen pendant une heure. Coupez tous les l\u00e9gumes en d\u00e9s \u00e0 l\u2019exception des pommes de terre et faites-les bouillir. Au moment ou les carottes sont bien cuites, vous pouvez ajouter les pommes de terre. Rabaissez le feu.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Entre temps, faites bouillir de l\u2019eau dans une casserole plus petite, dans laquelle vous pouvez mettre les tomates pendant quelques minutes. Pelez-les et hachez-les avant de les m\u00e9langer avec la paprika, une cuiller\u00e9e de sel et un peu de poivre du moulin. Ajoutez le bors \u00e0 ce m\u00e9lange que vous devez ensuite porter \u00e0 \u00e9bullition. Une fois bouilli et \u00e9cum\u00e9, versez-le dans la marmite \u00e0 soupe que vous laisserez mijoter \u00e0 feu doux pendant une autre quinzaine de minutes. Ajoutez \u00e0 la fin des feuilles de persil, de liv\u00e8che et de c\u00e9leri.
