La vaste majorit\u00e9 des Roumains ne consomment de l&rsquo;agneau qu&rsquo;\u00e0 cette occasion. Par contre, la viande de mouton est plus appr\u00e9ci\u00e9e notamment en automne, lorsque les bergers et depuis quelque temps les bouchers la mettent dans toute sorte de marinades \u00e0 base de sel et d&rsquo;\u00e9pices.<\/p>\n<p>Revenons au printemps et \u00e0 l&rsquo;agneau pascal, pour vous dire qu&rsquo;il sert de base pour toute une s\u00e9rie de plats : la t\u00eate et parfois le collier sont utilis\u00e9s dans des soupes aigres aux arroches et \u00e0 l&rsquo;oseille, les abats sont utilis\u00e9s pour pr\u00e9parer la terrine appel\u00e9e \u00ab drob \u00bb et finalement les gigots et les \u00e9paules sont gard\u00e9s pour le r\u00f4ti. Sachez que presque chaque m\u00e8re de famille a sa propre version du r\u00f4ti d&rsquo;agneau, selon les pr\u00e9f\u00e9rences de ses membres et du four utilis\u00e9. Certaines pr\u00e9f\u00e8rent la cuisson rapide, d&rsquo;autres &#8211; la lente -, certaines familles y ajoutent plus d&rsquo;\u00e9pices que d&rsquo;autres etc.<\/p>\n<p>&nbsp;<\/p>\n<p>Aujourd&rsquo;hui je vous propose un r\u00f4ti d&rsquo;agneau roul\u00e9 sans os. Il vous faut un gigot d&rsquo;agneau assez grand, \u00e0 3 kilos environ. Commencez par d\u00e9couper l&rsquo;os et toute impuret\u00e9 que le boucher aurait oubli\u00e9 d&rsquo;\u00e9liminer. Coupez encore la viande pour obtenir un morceau bien \u00e9tal\u00e9 d&rsquo;une \u00e9paisseur de quelques centim\u00e8tres. Saler avec du sel de mer, poivrez et parsemez d&rsquo;herbes : thym, coriandre, romarin. Ensuite il faut rouler la viande et la lier avec de la ficelle alimentaire. Huilez avec de l&rsquo;huile d&rsquo;olives et posez le r\u00f4ti sur un plat qui va au four avec une grille avec le gras vers le haut.<\/p>\n<p>&nbsp;<\/p>\n<p>Ajouter de l&rsquo;eau ou bien du vin au plat pour que les graisses qui couleront ne produisent une fum\u00e9e assez d\u00e9sagr\u00e9able en cuisine. Allumez le four et portez-le \u00e0 180 degr\u00e9s et enfournez pour 2 \u00e0 3 heures. Evidemment, il faut v\u00e9rifier ce qui se passe dans le four et arroser le r\u00f4ti avec des jus de cuisson. Pour r\u00f4ti d&rsquo;agneau s&rsquo;accompagne d&rsquo;habitude de pommes de terre au four, avec de l&rsquo;ail et du romarin. Vous pouvez pr\u00e9voir une pur\u00e9e de pommes de terre. Pourtant au menu festif de P\u00e2ques, le r\u00f4ti est le plus souvent accompagn\u00e9 tout simplement d&rsquo;une salade de printemps, faite de laitue, oignons verts, concombres et radis.
