Ce n&rsquo;est pas un mets pour les cuisiniers d\u00e9butants, cela est s\u00fbr.&#13;<br \/>\nPourtant, le brochet farci, coup\u00e9 en rondelles, sera la vedette de tout repas&#13;<br \/>\nfestif, servi froid en entr\u00e9e ou chaud comme plat principal. Pour un brochet de&#13;<br \/>\ndeux kilos il vous faut aussi une alose de la mer Noire fum\u00e9e, trois \u0153ufs,&#13;<br \/>\ntrois bottes de persil, un oignon, cinq gousses d&rsquo;ail, une canette de coulis de&#13;<br \/>\ntomates, deux cuiller\u00e9es de riz, un verre de vin blanc demi-sec, sel et&#13;<br \/>\npoivre du moulin. <\/p>\n<p><\/p>\n<p>Nettoyez le brochet et enlevez-lui les \u00e9cailles, avant de&#13;<br \/>\ncommencer \u00e0 lui retirer la peau, \u00e0 partir de la t\u00eate vers la queue. Coupez&#13;<br \/>\n\u00e9galement la t\u00eate. Faites attention \u00e0 ne pas d\u00e9chirer la peau du brochet. D\u00e9sossez&#13;<br \/>\nla chair et proc\u00e9dez de la m\u00eame fa\u00e7on avec l&rsquo;alose fum\u00e9e. Hachez en brunoise un&#13;<br \/>\noignon et faites-le sauter dans un peu d&rsquo;huile de tournesol dans une po\u00eale&#13;<br \/>\nantiadh\u00e9sive. Ajoutez le riz et m\u00e9langez-le aux oignons, avant de verser un peu&#13;<br \/>\nd&rsquo;eau, ou mieux un bouillon fait avec les t\u00eates des brochets. Vous obtiendrez&#13;<br \/>\nune sorte de risotto auquel vous devez ajouter la chair de poisson, du persil&#13;<br \/>\nfinement hach\u00e9 et les gousses d&rsquo;ail \u00e9cras\u00e9es. Laissez la farce reposer un peu&#13;<br \/>\navant d&rsquo;ajouter les trois \u0153ufs battus. Salez et poivrez. Voil\u00e0, la farce est&#13;<br \/>\npr\u00eate \u00e0 \u00eatre ins\u00e9r\u00e9e dans la peau du brochet. <\/p>\n<p><\/p>\n<p>A la fin vous devez la lier avec&#13;<br \/>\ndu fil de cuisine ou avec des tiges de persil. Huilez-la d&rsquo;huile d&rsquo;olive et&#13;<br \/>\nparsemez-la de sel de mer. A la place de la t\u00eate vous pouvez mettre un&#13;<br \/>\ncouvercle fait d&rsquo;une rondelle de pomme de terre. Dans une casserole plus&#13;<br \/>\npetite, faites sauter une \u00e9chalote et une ou deux gousses d&rsquo;ail, avant de&#13;<br \/>\nverser le coulis de tomates et un verre de vin et si besoin est un peu de&#13;<br \/>\nbouillon de poisson. Salez et poivrez cette sauce avant de la porter \u00e0&#13;<br \/>\n\u00e9bullition. <\/p>\n<p><\/p>\n<p>Posez le poisson dans une cocotte qui va au four et recouvrez-le de&#13;<br \/>\nla sauce avant de la mettre au four pendant trois quarts d&rsquo;heure environ \u00e0 feu&#13;<br \/>\nmoyen, 180 degr\u00e9s maximum. Si vous choisissez de servir le brochet farci en&#13;<br \/>\ntant que plat principal, vous pouvez \u00e9galement mettre \u00e0 son c\u00f4t\u00e9 dans la&#13;<br \/>\ncocotte quelques pommes de terre.
