Il vous faut 400 grammes de sucre semoule, 120 grammes de farine, 3 \u0153ufs, 8 ou 9 pommes plus acides, une dizaine de noix, 4 cuiller\u00e9es \u00e0 soupe de confiture de cerises, 50 grammes de beurre et des ar\u00f4mes de vanille et de rhum. Commencez par mettre environ 200 grammes de sucre dans une casserole ronde ou dans un moule \u00e0 tarte m\u00e9tallique \u00e0 feu doux jusqu&rsquo;\u00e0 ce que le sucre caram\u00e9lise. Remuez le r\u00e9cipient pour que le caramel arrive \u00e0 couvrir aussi les cot\u00e9s de la casserole. Ensuite laissez-la reposer. <\/p>\n<p><\/p>\n<p>Entre temps, pelez les pommes et enlevez les p\u00e9pins. Dans un r\u00e9cipient pour le mixeur, mettez trois \u0153ufs entiers et 200 grammes de sucre semoule et battez ce m\u00e9lange jusqu&rsquo;\u00e0 ce qu&rsquo;il commence \u00e0 augmenter en volume. Puis ajoutez la farine avec une cuill\u00e8re en bois, en remuant du bas vers haut. Puis, m\u00e9langez du sirop de confiture aux noix que vous pouvez broyer grossi\u00e8rement. Ce m\u00e9lange, vous pouvez le mettre dans le petit trou qui reste au milieu des pommes ou bien le m\u00e9langer aux pommes, si vous d\u00e9cidez de couper les fruits en morceaux. <\/p>\n<p><\/p>\n<p>Beurrez le r\u00e9cipient au caramel, puis posez les pommes farcies du m\u00e9lange de noix. Ensuite versez sur les pommes la p\u00e2te et mettez au four pendant une quarantaine de minutes \u00e0 170 degr\u00e9s. V\u00e9rifiez la cuisson \u00e0 l&rsquo;aide d&rsquo;un cure-dent : s&rsquo;il en ressort bien propre, vous pouvez sortir le g\u00e2teau du four. Laissez-le reposer un peu (une ou deux minutes) avant de le renverser sur un plateau. Faites attention ! Si vous oubliez le g\u00e2teau dans la casserole ou le moule \u00e0 tarte, le caramel redeviendra ferme et ce sera impossible de le retirer du r\u00e9cipient. <\/p>\n<p><\/p>\n<p>Laissez reposer le g\u00e2teau sur le plateau et pr\u00e9parez un sirop avec quatre cuiller\u00e9es \u00e0 caf\u00e9 de sucre, un verre d&rsquo;eau et une pomme enti\u00e8re r\u00e2p\u00e9e. Attendez jusqu&rsquo;\u00e0 ce que la temp\u00e9rature du g\u00e2teau baisse avant de le napper de sirop et de le recouvrir de cr\u00e8me chantilly.
