Il s&rsquo;agit tout simplement de viande de mouton \u00e9pic\u00e9e et sal\u00e9e, que l&rsquo;on pr\u00e9pare ensuite sur le grill ou mieux sur un barbecue \u00e0 charbon. <\/p>\n<p><\/p>\n<p>D&rsquo;habitude, de nos jours, le pastrami de mouton, on le trouve partout dans les grandes villes et en toute saison. Tout boucher qui se respecte doit proposer aussi ce genre de viande sal\u00e9e et marin\u00e9e, que l&rsquo;on retrouve aussi dans les vitrines frigorifiques des hypermarch\u00e9s. Evidemment les produits varient d&rsquo;un endroit \u00e0 un autre, en termes de tendret\u00e9, de prix, de go\u00fbt et de qualit\u00e9. Parfois on risque d&rsquo;acheter un pastrami trop sal\u00e9, trop \u00e9pic\u00e9 et pas trop tendre. C&rsquo;est pourquoi, si on trouve une bonne source de pastrami de mouton, il faut en devenir un client r\u00e9gulier.  <\/p>\n<p><\/p>\n<p>Mais il existe aussi la possibilit\u00e9 de pr\u00e9parer cette sp\u00e9cialit\u00e9 paysanne chez soi, puisque les recettes abondent sur les sites sp\u00e9cialis\u00e9s et dans les livres de cuisine traditionnelle roumaine. La viande de mouton jeune, il faut la laver, la laisser s\u00e9cher un peu au grand air et y faire de nombreuses et profondes entailles, allant jusqu&rsquo;\u00e0 l&rsquo;os des gigots par exemple. Il faut ensuite la frotter avec du thym et plusieurs autres condiments : paprika, poivre, romarin, basilic et piment de Jama\u00efque. <\/p>\n<p><\/p>\n<p>Attention \u00e0 ne pas exag\u00e9rer avec les \u00e9pices, pour ne pas dissimuler compl\u00e8tement l&rsquo;ar\u00f4me de la viande de mouton. Saupoudrer la viande de sel fin et la placer dans un r\u00e9cipient propre, de pr\u00e9f\u00e9rence en bois. Garder dans la saumure ainsi obtenue deux \u00e0 quatre jours au frais en retournant la viande trois fois par jour. Puis il faut la suspendre pendant plusieurs heures au grand air pour la faire s\u00e9cher du mieux possible, mais pas trop, afin que la viande reste tendre. <\/p>\n<p><\/p>\n<p>Enfin le pastrami il faut le faire griller sur un barbecue et l&rsquo;accompagner d&rsquo;une belle polenta, d&rsquo;une mousse \u00e0 l&rsquo;ail et de l\u00e9gumes en saumure. Pour l&rsquo;arroser, vous pouvez envisager un vin rouge nouveau mais la tradition exige la pr\u00e9sence d&rsquo;un mo\u00fbt qui pique un peu la langue afin de c\u00e9l\u00e9brer joyeusement les vendanges.
