Il vous faut donc un gros poulet de ferme organique si possible, puisqu&rsquo;il serait dommage d&rsquo;utiliser le poulet habituel que l&rsquo;on retrouve dans les \u00e9tals des supermarch\u00e9s. Il vous faut aussi un kilo de champignons de Paris, 250 grammes de cr\u00e8me fra\u00eeche, 2 ou 3 \u0153ufs, deux oignons, deux ou trois verres de vin blanc, des lardons fum\u00e9s, 3 ou 4 cuiller\u00e9es de beurre, quelques gousses d&rsquo;ail et des herbes : persil, feuilles de c\u00e9leri, paprika, sel et poivre du moulin. <\/p>\n<p><\/p>\n<p>D\u00e9coupez le poulet et gardez les bons morceaux : cuisses, blanc, m\u00eame les ailes. Les autres partiez, mettez-les \u00e0 bouillir dans une casserole moyenne \u00e0 feu moyen. Faites dorer les morceaux de poulet dans du beurre sur tous les c\u00f4t\u00e9s, puis mouillez avec le vin et le bouillon de poulet et mettez au four chaud, soit  \u00e0 170 degr\u00e9s, pour les cuire \u00e0 c\u0153ur. <\/p>\n<p><\/p>\n<p>Hachez les oignons et faites-les dorer pour quelques minutes avant d&rsquo;ajouter les lardons fum\u00e9s. Coupez les champignons, incorporez-les et faites-les revenir un peu avant d&rsquo;y ajouter du vin et du bouillon. Retirer la chair de poulet des os, la hacher et l&rsquo;ajouter aux champignons \u00e0 la sauce en m\u00eame temps que l&rsquo;ail. <\/p>\n<p><\/p>\n<p>Entre temps, au moment o\u00f9 les morceaux de poulet semblent pr\u00eats, retirez-les du four et ajoutez-y les champignons et la sauce, puis versez de la cr\u00e8me fra\u00eeche. Remettez le plat au four pendant quelques dizaines de minutes. Hachez les herbes et mettez-les dans un m\u00e9lange d&rsquo;\u0153ufs battus avec de la cr\u00e8me. Versez ce m\u00e9lange sur la casserole et c&rsquo;est tout, le poulet fa\u00e7on monast\u00e8re est bien pr\u00eat \u00e0 \u00eatre servi, avec de la polenta chaude et du vin blanc ou ros\u00e9 bien frais.
