En cette saison, la cuisine roumaine&#13;<br \/>\nest domin\u00e9e par les l\u00e9gumes racines : notamment pommes de terre, mais&#13;<br \/>\naussi carottes, betteraves, panais et c\u00e9leri rave, des l\u00e9gumes pr\u00e9serv\u00e9s&#13;<br \/>\nbien au frais dans les caves des maisons paysannes.&#13;<br \/>\nUtilis\u00e9 d&rsquo;habitude comme ingr\u00e9dient dans des soupes et des rago\u00fbts, le c\u00e9leri&#13;<br \/>\nrave peut devenir aussi l&rsquo;ingr\u00e9dient principal d&rsquo;une sorte de rago\u00fbt simple&#13;<br \/>\nmais tr\u00e8s savoureux. Il vous faut donc deux ou trois t\u00eates de c\u00e9leri rave, deux&#13;<br \/>\noignons, quelque 200 ml de coulis de tomates, une vingtaine d&rsquo;olives et le jus&#13;<br \/>\nd&rsquo;un citron. <\/p>\n<p><\/p>\n<p>Epluchez les c\u00e9leris rave et coupez-les en rondelles de moins d&rsquo;un&#13;<br \/>\ncentim\u00e8tre d&rsquo;\u00e9paisseur. Faites-les dorer dans une po\u00eale antiadh\u00e9sive avec un&#13;<br \/>\npeu d&rsquo;huile de tournesol. Mettez-les reposer sur des serviettes de papier.&#13;<br \/>\nHachez finement les oignons et faites-les revenir dans de l&rsquo;huile de tournesol,&#13;<br \/>\navant d&rsquo;ajouter du coulis de tomates et de l&rsquo;eau ou du bouillon de l\u00e9gumes.&#13;<br \/>\nSalez et poivrez. Faites bouillir pendant une bonne vingtaine de minutes \u00e0 feu&#13;<br \/>\nmoyen avant de passer cette sauce par une passoire pour s\u00e9parer les oignons. <\/p>\n<p><\/p>\n<p>Entre temps faites blanchir les olives. Mettez les rondelles de c\u00e9leri rave et&#13;<br \/>\nles olives dans une casserole, recouvrez de sauce et laissez mijoter \u00e0 feu&#13;<br \/>\nmoyen, voire doux. Afin d&rsquo;enrichir la sauce vous pouvez ajouter un peu de&#13;<br \/>\nfarine en pluie. Compl\u00e9tez avec de l&rsquo;eau ou du bouillon de l\u00e9gumes si besoin&#13;<br \/>\nest. Vers la fin de la cuisson, au moment o\u00f9 les rondelles de c\u00e9leri rave sont&#13;<br \/>\nbien tendres, vous pouvez ajouter du jus de citron, selon votre propre go\u00fbt. <\/p>\n<p><\/p>\n<p>Ce&#13;<br \/>\nplat est servi chaud, parsem\u00e9 de persil finement hach\u00e9, en accompagnement de&#13;<br \/>\ndiff\u00e9rentes viandes ou accompagn\u00e9 lui-m\u00eame par du riz, si on d\u00e9cide de rester v\u00e9g\u00e9tariens.&#13;<br \/>\nLes gourmands peuvent choisir de mettre dans la m\u00eame assiette r\u00f4ti, c\u00e9leri rave&#13;<br \/>\net riz.
