La recette est assez facile. D&rsquo;abord, il vous faut un kilo de farine et environ 600  ml d&rsquo;eau. Commencez par verser quelques 200 ml d&rsquo;eau au milieu d&rsquo;un bol rempli de farine avec une cuiller\u00e9e de sel et m\u00e9langez un peu ce contenu avec une noix de levure et un peu de sucre. Laissez reposer quelques minutes, puis m\u00e9langez compl\u00e8tement cette p\u00e2te en y ajoutant le reste d&rsquo;eau et de la farine si besoin est. Ajoutez aussi une vingtaine de millilitres d&rsquo;huile de tournesol. Laissez reposer un peu dans le bol pr\u00e8s d&rsquo;une source de chaleur pendant une trentaine, voire une quarantaine de minutes pour que la p\u00e2te arrive m\u00eame \u00e0 doubler de volume. <\/p>\n<p><\/p>\n<p>Entre temps, vous pouvez pr\u00e9parer la farce en m\u00e9langeant du fromage sal\u00e9 du genre telemea avec une botte de persil frais finement hach\u00e9. Evidemment vous pouvez utiliser aussi un m\u00e9lange de fromages et y mettre aussi du burduf &#8211; fromage de brebis \u00e0 p\u00e2te molle affin\u00e9 dans l&rsquo;estomac d&rsquo;un mouton, ou bien du fromage l\u00e9ger de vache du genre cottage. Ensuite il convient d&rsquo;utiliser un rouleau \u00e0 p\u00e2tisserie pour aplatir la p\u00e2te et former des disques similaires \u00e0 une pizza d&rsquo;un diam\u00e8tre d&rsquo;environ  35 &#8211; 40 centim\u00e8tres. Mettez un peu de farce au milieu de ce disque et retournez les bordures de p\u00e2te pour recouvrir enti\u00e8rement la farce. <\/p>\n<p><\/p>\n<p>Puis repassez le friand au rouleau mais sans exag\u00e9rer avant de le mettre dans une po\u00eale antiadh\u00e9sive avec quelques gouttes d&rsquo;huile \u00e0 feu moyen, voire doux. Faites cuire les friands pour environ deux minutes sur chaque c\u00f4t\u00e9. Cette tourte s&rsquo;accompagne \u00e0 merveille de lait caill\u00e9 ou de yaourt et elle peut \u00eatre consomm\u00e9e \u00e0 n&rsquo;importe quel moment de la journ\u00e9e.
