Ceux-ci sont simples, faciles \u00e0 pr\u00e9parer et ils ont comme ingr\u00e9dients des \u00e9l\u00e9ments disponibles aux habitants de cette r\u00e9gion de plaine. <\/p>\n<p><\/p>\n<p>La \u00ab luteni\u0163a \u00bb est assez r\u00e9pandue de nos jours encore en Serbie et Bulgarie, o\u00f9 elle se trouve aussi en conserve. Au nord du Danube, dans les r\u00e9gions de Munt\u00e9nie et d&rsquo;Olt\u00e9nie, elle est plut\u00f4t une curiosit\u00e9, une sorte de sp\u00e9cialit\u00e9 de l&rsquo;\u00e9t\u00e9 qui met \u00e0 profit les excellents l\u00e9gumes cultiv\u00e9s dans les plaines roumaines. Pour pr\u00e9parer cette recette, il vous faut une douzaine de grosses tomates, bien m\u00fbres du genre c\u0153ur de b\u0153uf. Lavez-les et posez-les sur un plateau qui va au four. Traditionnellement, celui-ci \u00e9tait en cuivre, mais vous pouvez \u00e9galement utiliser une cocotte en verre thermor\u00e9sistante. <\/p>\n<p><\/p>\n<p>Mettez les tomates au four pr\u00e9chauff\u00e9 \u00e0 180 degr\u00e9s environ et laissez les tomates cuire jusqu&rsquo;\u00e0 ce qu&rsquo;elles commencent \u00e0 s\u00e9cher et que leur couleur change un peu. Entre temps coupez en brunoise 2 ou 3 oignons et hachez finement un pilent rouge fort et une botte de persil. Sortez les tomates du four et pelez-les, puis \u00e9crasez leur chair que vous devez ensuite m\u00e9langer avec quelques 100 millilitres d&rsquo;huile de tournesol. A l&rsquo;aide d&rsquo;une cuill\u00e8re en bois, m\u00e9langez bien les tomates aux oignons et au persil, puis salez et poivre et voil\u00e0 que la \u00ab luteni\u0163a \u00bb est presque pr\u00eate \u00e0 consommer. <\/p>\n<p><\/p>\n<p>On dit pourtant qu&rsquo;afin de laisser les saveurs se combiner en paix, il vaut mieux la laisser reposer au frigo pendant quelques heures avant de la manger avec du pain chaud par exemple. Un autre d\u00e9riv\u00e9 de cette sauce peut-\u00eatre pr\u00e9par\u00e9 pour accompagner les grillades estivales. En ce cas, vous devez cuire sur le barbecue les tomates, avant de les peler et de les m\u00e9langer \u00e0 l&rsquo;huile et d&rsquo;y ajouter, outre le piment et les oignons de l&rsquo;ail \u00e9cras\u00e9. En ce cas, cette sauce va \u00e0 merveille avec des viandes de porc ou  de poulet grill\u00e9es, accompagn\u00e9es de cornichons en saumure.
