Hormis une vari\u00e9t\u00e9 de l\u00e9gumes frais, la ratatouille d&rsquo;Olt\u00e9nie peut contenir jusqu&rsquo;\u00e0 quatre types de viande : poulet, porc, b\u0153uf et mouton. Pr\u00e9voyez donc quelque 200 grammes environ pour chaque genre de viande. C\u00f4t\u00e9 l\u00e9gumes, il vous faut une carotte, un gros oignon, une aubergine, un chou-fleur moyen, voir petit, un c\u00e9leri rave, deux ou trois pommes de terre, des haricots verts et des gombos. Faites dorer la viande coup\u00e9e en cubes dans de l&rsquo;huile de tournesol, puis recouvrez d&rsquo;eau ou du bouillon de poulet par exemple. <\/p>\n<p><\/p>\n<p>Puis dans une po\u00eale antiadh\u00e9sive faites sauter dans un peu d&rsquo;huile les l\u00e9gumes coup\u00e9es en julienne et en d\u00e8s, \u00e0 feu moyen, voir doux au couvert. Faites attention \u00e0 ce que les l\u00e9gumes ne s\u00e8chent pas et pr\u00e9voyez d&rsquo;y ajouter du bouillon de l\u00e9gumes si besoin est. Apr\u00e8s une vingtaine de minutes, m\u00e9langez les l\u00e9gumes \u00e0 la viande et mettez ce m\u00e9lange dans une cocotte en terre cuite qui va au four. <\/p>\n<p><\/p>\n<p>Laissez la cocotte au four pr\u00e9chauff\u00e9 pendant une quinzaine de minutes. Entre temps, faites blanchir cinq ou six tomates moyennes dans de l&rsquo;eau en \u00e9bullition avec un peu de sel. Pelez les tomates, hachez les en morceaux plut\u00f4t gros et puis versez-les sur la ratatouille. C&rsquo;est \u00e0 ce moment que vous pouvez \u00e9galement ajouter de l&rsquo;ail \u00e9cras\u00e9 pour un peu plus de saveur. Remettez au four pendant une autre quinzaine ou vingtaine de minutes. <\/p>\n<p><\/p>\n<p>Servez le ghiveci d&rsquo;Olt\u00e9nie chaud, parsem\u00e9 de persil frais finement hach\u00e9 et d&rsquo;une ou deux cuiller\u00e9es de cr\u00e8me fraiche si vous en avez.
