Sachez d&rsquo;abord que la recette classique de zacusca, aux poivrons rouges et aubergines grill\u00e9es, peut \u00eatre d\u00e9clin\u00e9e en de nombreuses variantes, en ajoutant diff\u00e9rents autres l\u00e9gumes, tels des haricots secs, des courgettes et des champignons. <\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Aujourd&rsquo;hui je vous propose la simplicit\u00e9 et j&rsquo;ai choisi de vous pr\u00e9senter une zacusca faite principalement de poivrons. Pour 3 kilos de poivrons rouges il vous faut aussi un kilo de poivrons tomate, un kilo d&rsquo;oignons, 2 kilos de tomates, environ 400 ml d&rsquo;huile de tournesol, des feuilles de laurier, du paprika, sel et poivre du moulin. Commencez par laver les poivrons et les poivrons tomates et les griller. Puis enlevez la peau, tout comme le milieu et les p\u00e9pins. <\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Lavez les tomates et trempez-les dans de l&rsquo;eau bouillante afin de pouvoir les peler ensuite. Coupez l&rsquo;oignon en julienne et mettez-le dans de l&rsquo;huile dans une casserole plus grande ou une marmite, \u00e0 feu moyen. Apr\u00e8s une trentaine de minutes ou au moment o\u00f9 l&rsquo;oignon commence \u00e0 prendre une couleur plut\u00f4t dor\u00e9e, ajoutez les poivrons coup\u00e9s en lamelles et les tomates hach\u00e9es. M\u00e9langez bien, ajoutez les  \u00e9pices et laissez mijoter \u00e0 feu doux pendant deux heures, en m\u00e9langeant de temps en temps jusqu&rsquo;\u00e0 ce que l&rsquo;huile commence \u00e0 appara\u00eetre \u00e0 la surface de la casserole. <\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Lavez plusieurs bocaux au couvercle en m\u00e9tal. St\u00e9rilisez-les au four avant d&rsquo;y mettre la zacusca en \u00e9bullition et fermez les couvercles. Vous pouvez ensuite soit laisser les bocaux refroidir graduellement sous des couvertures jusqu&rsquo;au lendemain, soit les mettre au four pr\u00e9chauff\u00e9 \u00e0 180 degr\u00e9s pendant une dizaine de minutes et puis de couper le feu et de les laisser refroidir \u00e0 l&rsquo;int\u00e9rieur de celui-ci. De toute fa\u00e7on, pr\u00e9voyez de les stocker dans une cave ou dans un endroit au frais, \u00e0 l&rsquo;abri des rayons du soleil. C&rsquo;est une variante pour conserver la saveur des l\u00e9gumes d&rsquo;\u00e9t\u00e9 jusqu&rsquo;au milieu de l&rsquo;hiver.
