Pendant cette p\u00e9riode, il est interdit de consommer toute nourriture&#13;<br \/>\npr\u00e9par\u00e9e avec des ingr\u00e9dients d&rsquo;origine animale : viande, lait, \u0153ufs.&#13;<br \/>\nSeule exception : pendant certains jours, dont notamment presque tous les&#13;<br \/>\nsamedis et dimanches il est permis de manger du poisson. C&rsquo;est pourquoi la&#13;<br \/>\ngastronomie roumaine inclut toute sorte de sp\u00e9cialit\u00e9s \u00e0 base de diff\u00e9rents&#13;<br \/>\npoissons de mer mais aussi d&rsquo;eau douce.<\/p>\n<p><\/p>\n<p>Aujourd&rsquo;hui nous utilisons la sandre,&#13;<br \/>\nun poisson assez fade et peut-\u00eatre pas trop savoureux que l&rsquo;on peut pourtant&#13;<br \/>\ninclure dans des plats \u00e0 la fois sains et exquis. Prenez une sandre d&rsquo;un kilo,&#13;<br \/>\nun kilo et demie et nettoyez-l\u00e0 rigoureusement. Enlevez les \u00e9cailles, les&#13;<br \/>\nintestins et les branchies et d\u00e9coupez les filets en plusieurs pi\u00e8ces \u00e9gales. Il&#13;<br \/>\nvous faut aussi un gros oignon qu&rsquo;il faut bouillir dans de l&rsquo;eau sal\u00e9e avec la t\u00eate,&#13;<br \/>\nla queue ainsi que les \u0153ufs (si le poisson en a eu, \u00e9videmment). Ajoutez y&#13;<br \/>\naussi deux feuilles de laurier et quelques grains de poivre. Puis apr\u00e8s une&#13;<br \/>\ndemi-heure environ, mettez dans la m\u00eame casserole les filets de poissons.&#13;<br \/>\nRabaissez le feu et faites bouillir lentement pendant une demi-heure environ&#13;<br \/>\nafin de pr\u00e9server le plus que possible l&rsquo;int\u00e9grit\u00e9 des filets de sandre. Coupez&#13;<br \/>\nle feu et retirer les pi\u00e8ces de poisson et les l\u00e9gumes. Posez les morceaux de&#13;<br \/>\npoisson sur un plat plut\u00f4t profond ou sur une assiette creuse, d\u00e9corez avec des&#13;<br \/>\nfeuilles de persil et des rondelles de carotte ou du chou-fleur bouilli.&#13;<br \/>\nAjoutez quelques 10 grammes de g\u00e9latine dans le bouillon et portez-le \u00e0 nouveau&#13;<br \/>\n\u00e0 \u00e9bullition. <\/p>\n<p><\/p>\n<p>Enfin, versez attentivement le bouillon dans les r\u00e9cipients afin&#13;<br \/>\nde recouvrir les ingr\u00e9dients : poisson, l\u00e9gumes, herbes. Mettez au frais&#13;<br \/>\njusqu&rsquo;\u00e0 ce que la g\u00e9latine arrive \u00e0 se solidifier. Servez en entr\u00e9e, accompagn\u00e9&#13;<br \/>\nd&rsquo;un verre d&rsquo;eau de vie par exemple.
