Les plus simples \u00e0 pr\u00e9parer sont les l\u00e9gumes en saumure, que les Roumains appellent \u00ab acrituri \u00bb, litt\u00e9ralement \u00ab choses aigres \u00bb. Il vous faut des tomates vertes, des choux-fleurs, un chou blanc et un autre rouge, de petites past\u00e8ques vertes, des cornichons, des c\u00e9leris-raves avec tiges et feuilles, des carottes et des piments rouges ou verts. Sachez que selon la tradition, il ne faut pas m\u00e9langer poivrons tomates aux cornichons puisqu&rsquo;apparemment les deux ne s&rsquo;entendent pas.  <\/p>\n<p><\/p>\n<p>Enfin, vous devez \u00e9galement savoir que les bocaux de l\u00e9gumes en saumure, vous devez les pr\u00e9server au frais, \u00e0 l&rsquo;abri des rayons du soleil. Sinon, les l\u00e9gumes risquent de devenir trop sal\u00e9s ou bien s&rsquo;ab\u00eemer rapidement. L&rsquo;id\u00e9e c&rsquo;est de les pr\u00e9server depuis l&rsquo;automne et jusqu&rsquo;au beau milieu de l&rsquo;hiver.  Pour la saumure il vous faut \u00e9galement des graines de poivre, de l&rsquo;aneth s\u00e9ch\u00e9 et des feuilles de laurier. Lavez soigneusement les l\u00e9gumes. Il vous faut aussi des bocaux plut\u00f4t grands, sur le fond desquels vous devez mettre une couche de tiges et de feuilles de c\u00e9leri et une brindille de cerisier avec des feuilles vertes. Lavez les l\u00e9gumes soigneusement, \u00e9pluchez et coupez en rondelles le c\u00e9leri-rave et les carottes. <\/p>\n<p><\/p>\n<p>Posez les l\u00e9gumes dans les bocaux alternativement : tomates vertes, chou-fleur, c\u00e9leri-rave, chou blanc, cornichons, piments, chou rouge et ainsi de suite. Enfin ajoutez-y aussi des tiges d&rsquo;aneth s\u00e9ch\u00e9es et terminez par une couche de tiges et de feuilles de c\u00e9leri et de cerisier. C&rsquo;est le moment de pr\u00e9parer la saumure. Pour chaque litre d&rsquo;eau il vous faut une cuiller\u00e9e de gros sel de mine de Roumanie. Dans une casserole, pr\u00e9parez cette saumure en ajoutant aussi des grains de poivre et des feuilles de laurier et m\u00e9langez soigneusement afin de dissoudre le sel. <\/p>\n<p><\/p>\n<p>Versez la saumure sur les l\u00e9gumes et remplissez les bocaux, avant de les recouvrir d&rsquo;un couvercle. Il ne vous reste qu&rsquo;\u00e0 patienter pendant quelques semaines avant de pouvoir les d\u00e9guster. N&rsquo;oubliez pas de les laver \u00e0 l&rsquo;eau froide afin de les dessaler un peu. Les servir pour accompagner grillades et diff\u00e9rents fricass\u00e9es riches en graisse ou bien des cassoulets en p\u00e9riode de car\u00eame.
