Pourtant, en plein hiver, le choix les l\u00e9gumes frais \u00e0 utiliser est assez restreint si on souhaite absolument manger des produits naturels de la r\u00e9gion o\u00f9 on habite. <\/p>\n<p>La soupe aigre de betteraves sp\u00e9cifique \u00e0 la r\u00e9gion de Bucovine dans le nord-est de la Roumanie est sans aucun doute le r\u00e9sultat de l&rsquo;influence culinaire ukrainienne sur la r\u00e9gion. Pour la soupe aigre de betteraves ou bien le borsch de betteraves, il vous faut : une ou deux betteraves, 4 ou 5 pommes de terre, une carotte, une racine de persil ou bien un c\u00e9leri rave, un oignon, une botte de persil, de la cr\u00e8me fraiche et l&rsquo;ingr\u00e9dient qui ne doit absolument manquer : un demi litre de bor\u0219. Rappelons-le, le bor\u0219 est un condiment, obtenu \u00e0 partir de la fermentation de son de bl\u00e9, qui utiliser pour donner le gout aigre aux soupes tellement appr\u00e9ci\u00e9 par les Roumains. Dans les campagnes, le bor\u0219 est pr\u00e9par\u00e9 \u00e0 la maison, mais la pr\u00e9paration est longue, et en ville l&rsquo;on peut trouver dans le commerce soit du bor\u0219 frais vendu par les ruraux sur les march\u00e9s, soit du bor\u0219 industriel en sachet d\u00e9shydrat\u00e9. <\/p>\n<p>Pour la pr\u00e9paration, commencez \u00e0 \u00e9plucher les betteraves et  par les passer par une r\u00e2pe de cuisine. Faites bouillir les betteraves r\u00e2p\u00e9es dans du bor\u0219 pendant une quinzaine de minutes. Si vous utilisez du bor\u0219 d\u00e9shydrat\u00e9, vous mettez les betteraves dans de l&rsquo;eau en \u00e9bullition et puis vous ajoutez le condiment. Pelez les pommes de terre et coupez-les en cubes puis faites-les bouillir dans deux litres d&rsquo;eau dans une marmite. Entre temps, faites dorer les autres l\u00e9gumes avant de les ajouter dans la m\u00eame casserole. Au moment o\u00f9 ces l\u00e9gumes sont presque cuits, ajouter les betteraves avec le bor\u0219, salez et poivrez. <\/p>\n<p>Coupez le feu et prenez le contenu d&rsquo;une louche de bouillon et laissez-le refroidir un peu dans un bol. Ajoutez-y la cr\u00e8me fraiche et puis versez le contenu du bol dans la marmite \u00e0 soupe. Ce dernier ingr\u00e9dient est optionnel, mais sachez que sa pr\u00e9sence ne fait qu&rsquo;enrichir la saveur de la soupe. Enfin parsemez de persil finement hach\u00e9 avant de servir.
