Pr\u00e9voyez donc environ un kilo de tiges de poireaux plut\u00f4t grandes, 250 grammes de viande hach\u00e9e de b\u0153uf, trois \u0153ufs, 50 grammes de beurre, 100 ml de vin blanc sec, 150 grammes de fromage sal\u00e9 du genre telemea, 200 grammes de champignons, 100 grammes de cr\u00e8me aigre, deux cuiller\u00e9es de coulis de poivrons et de tomates, un peu de miel, sel et poivre du moulin. <\/p>\n<p><\/p>\n<p>Apr\u00e8s avoir lav\u00e9 et nettoy\u00e9 les poireaux, coupez-les en morceaux longs d&rsquo;environ 5 ou 6 cm, retirez le milieu laissant uniquement deux ou trois feuilles. Le milieu des poireaux, coupez-le en brunoise avant de le m\u00e9langer \u00e0 la viande hach\u00e9e. Ajoutez-y aussi un \u0153uf puis salez et poivrez. Ensuite, commencez \u00e0 farcir les tiges avec ce m\u00e9lange, avant de les poser dans une po\u00eale antiadh\u00e9sive et de les faire dorer un peu. Entre temps, r\u00e2pez le fromage. Hachez finement les champignons et faites-les revenir dans du beurre \u00e0 feu vif. <\/p>\n<p><\/p>\n<p>Laisser-les reposer au moment o\u00f9 ils sont bien dor\u00e9s et il n&rsquo;y a plus de liquide dans la po\u00eale. S\u00e9parez les jaunes et les blancs des deux \u0153ufs qui restent et faites monter les blancs en neige. Les jaunes, il faut les m\u00e9langer avec le beurre jusqu&rsquo;\u00e0 ce que le m\u00e9lange devienne cr\u00e9meux. Salez et poivrez et ajoutez le fromage r\u00e2p\u00e9, les champignons, la cr\u00e8me et les blancs en neige. Beurrez une cocotte qui va au four, parsemez de chapelure et posez les poireaux farcis. <\/p>\n<p><\/p>\n<p>Versez ensuite le m\u00e9lange d&rsquo;\u0153ufs et de fromage et enfournez \u00e0 feu moyen, soit \u00e0 150 degr\u00e9s, pendant une vingtaine de minutes ou bien jusqu&rsquo;\u00e0 ce qu&rsquo;une cro\u00fbte dor\u00e9e se forme en surface.
