Durant les \u00e9v\u00e9nements qui se d\u00e9roulent en plein air dans les villes roumaines, les municipalit\u00e9s partagent au public du cassoulet au jarret fum\u00e9, une pratique qui se r\u00e9p\u00e8te depuis plusieurs ann\u00e9es. Voil\u00e0 une autre raison de pr\u00e9parer ce plat savoureux et r\u00e9confortant.<\/p>\n<p><\/p>\n<p>Il vous faut un jarret entier fum\u00e9 avec os d&rsquo;un poids allant de 1 kilo \u00e0 un kilo et demi. Il vous faut aussi quelque 700 grammes d&rsquo;haricots secs, deux oignons, 3 ou 4 carottes et 500 ml de coulis de tomates. Cette recette n\u00e9cessite un certain temps donc pr\u00e9voyez deux jours en effet. Vous devez laisser tremper les haricots dans de l&rsquo;eau froide une nuit\u00e9e, la p\u00e9riode varie selon le type d&rsquo;haricots que vous utilisez. Pensez \u00e0 remplacer l&rsquo;eau \u00e0 plusieurs reprises. Le lendemain, vous pouvez faire bouillir les haricots dans de l&rsquo;eau sal\u00e9e avec peu de bicarbonate de sodium. <\/p>\n<p><\/p>\n<p>Portez \u00e0 \u00e9bullition, faites bouillir pendant une quinzaine de minutes, puis remplacez l&rsquo;eau avec de l&rsquo;eau froide et r\u00e9p\u00e9tez cette pratique \u00e0 deux ou trois reprises jusqu&rsquo;\u00e0 ce que les haricots sont bien cuits. Entre temps, faites cuire le jarret dans une cocotte minute pendant une bonne heure, voire une heure et demie. Puis sortez le jarret et retirez la viande de l&rsquo;os tout en gardant la couenne. Ne jetez pas le bouillon. Ensuite, coupez les oignons et les carottes en brunoise et faites-les dorer dans de l&rsquo;huile dans une grosse casserole qui peut aller aussi au four. Ajoutez les haricots et recouvrez de bouillon de jarret. <\/p>\n<p><\/p>\n<p>Une demi-heure apr\u00e8s, versez le coulis de tomates et la viande. Salez (si besoin est, puisque le gigot est souvent tr\u00e8s sal\u00e9) poivrez et ajoutez aussi des feuilles de laurier, et du paprika doux. Enfournez pour quelques minutes si vous voulez.
