Voici comment on le fait. Pour le biscuit de la B\u00fbche de No\u00ebl, il vous faut &#8211; 6 blancs d&rsquo;\u0153ufs, 120 grammes de sucre, 150 grammes de noix finement \u00e9cras\u00e9es et 50 grammes de farine. Battez les blancs d&rsquo;\u0153ufs dans un bol en ajoutant peu \u00e0 peu le sucre, pour obtenir une meringue bien a\u00e9r\u00e9e. Ajoutez les noix \u00e9cras\u00e9es et la farine et m\u00e9langez soigneusement pour obtenir une pr\u00e9paration homog\u00e8ne. Versez le m\u00e9lange sur une plaque \u00e0 p\u00e2tisserie couverte de papier sulfuris\u00e9 et \u00e9talez-le \u00e0 l&rsquo;aide d&rsquo;une spatule pour obtenir un grand rectangle. Pr\u00e9chauffez le four \u00e0 180 degr\u00e9s et enfournez pendant 10 minutes. D\u00e9coupez les bords du biscuit pour obtenir un rectangle bien net. Enlevez le papier sulfuris\u00e9 et enroulez le biscuit tout doucement dans une serviette humide. Laissez le biscuit bien refroidir.<\/p>\n<p>Maintenant on pr\u00e9pare la mousse au chocolat. Il vous faut &#8211; 6 jaunes d&rsquo;\u0153ufs, 120 grammes de sucre, 250 grammes de beure, 200 grammes de sucre glace, 100 grammes de noix concass\u00e9es et 150 grammes de chocolat de p\u00e2tisserie. Dans une casserole, battez les jaunes d&rsquo;\u0153ufs, en ajoutant le sucre. Posez la casserole au-dessus d&rsquo;une autre casserole avec de l&rsquo;eau fr\u00e9missante et m\u00e9langez pendant 10 minutes. Ajoutez le chocolat et faites-le fondre. Laissez refroidir. Dans un bol battez le beure et ajoutez le sucre glace et les noix \u00e9cras\u00e9es. Maintenant combinez les deux compositions en m\u00e9langeant attentivement. Et voil\u00e0 ! La mousse est pr\u00eate ! <\/p>\n<p>C&rsquo;est l&rsquo;heure de la derni\u00e8re \u00e9tape. D\u00e9roulez le biscuit et \u00e9talez la mousse au chocolat. Enroulez \u00e0 nouveau le biscuit d\u00e9licatement. Gardez un peu de mousse dans laquelle vous ajoutez 50 grammes de chocolat fondu pour obtenir une couleur plus fonc\u00e9e, pour recouvrir uniform\u00e9ment le g\u00e2teau. Pour la d\u00e9coration, vous pouvez simplement saupoudrer la B\u00fbche de No\u00ebl de cacao en poudre et de sucre glace. Mettez le g\u00e2teau au frigo pendant 2 heures.
