La \u00ab scordolea \u00bb est un plat origine grecque, d&rsquo;ailleurs le mot grec skordo se traduit par ail.  Pour le pr\u00e9parer il vous faut un kilo de pommes de terre et plusieurs filets de poisson fum\u00e9, entre 500 et 750 grammes. Il vous faut aussi une cuiller\u00e9e d&rsquo;huile ou une tasse de lait, du beurre, des noix, quelques gousses d&rsquo;ail, du poivre et quelques feuilles de c\u00e9leri ou de persil. <\/p>\n<p><\/p>\n<p>Commencez par pr\u00e9parer une pur\u00e9e de pommes de terre.Les habitants du delta mettent des filets de poisson \u00e0 bouillir un peu aux c\u00f4t\u00e9s des pommes de terre. Si le poisson est peu fum\u00e9, vous pouvez \u00e9galement le faire bouillir, le retirer de la casserole et utiliser le m\u00eame bouillon pour faire cuire les pommes de terre.  Vu que d&rsquo;habitude le poisson fum\u00e9 est \u00e9galement sal\u00e9, faites attention \u00e0 la quantit\u00e9 de sel que vous mettez dans la pur\u00e9e. Pour celle-ci vous pouvez mettre soit du lait et du beurre soit de l&rsquo;huile et une partie de l&rsquo;eau dans laquelle vous avez fait bouillir les pommes de terre et le poisson. <\/p>\n<p><\/p>\n<p>Ajoutez dans la pur\u00e9e les noix \u00e9cras\u00e9es, les gousses d&rsquo;ail, du poivre et les feuilles de c\u00e9leri hach\u00e9es et m\u00e9langez jusqu&rsquo;\u00e0 ce que la pur\u00e9e soit bien cr\u00e9meuse. Huilez une cocotte qui va au four, posez une couche de pur\u00e9e de pommes de terre, puis une autre couche de chair de poisson ou bien des filets de poisson, et recouvrez par une autre couche de pur\u00e9e. Ensuite j&rsquo;ai recouvert le plat de fromage du genre \u00ab cachcaval \u00bb, une sorte de gruy\u00e8re  avant de l&rsquo;enfourner pendant quelques minutes.
