Il s&rsquo;agit des poireaux farcis, une sp\u00e9cialit\u00e9 d\u00e9licieuse, m\u00eame si pas facile \u00e0 pr\u00e9parer \u00e0 premi\u00e8re vue. Il vous faut un kilo et demi de poireaux, un demi-kilo de viande hach\u00e9e de b\u0153uf, un demi-litre de bouillon de b\u0153uf, deux \u0153ufs, 50 grammes de coulis de poivrons rouges et de tomates, une noix de beurre, un verre de vin blanc sec, sel et poivre du moulin et une petite cuiller\u00e9e de miel. <\/p>\n<p><\/p>\n<p>Lavez et coupez les poireaux en segments d&rsquo;environ 7 centim\u00e8tres. Videz-les de leur milieu, laissant quelques feuilles seulement &#8211; deux ou trois tout au plus. Le milieu, il faut le hacher afin de le m\u00e9langer \u00e0 la viande et aux \u0153ufs. M\u00e9langer rigoureusement cette farce, la saler et poivrer. Ces tuyaux de poireaux, il faut les remplir de viande hach\u00e9e et les faire dorer dans du beurre dans une grosse po\u00eale. Recouvrez de bouillon de b\u0153uf et de vin et ajoutez du coulis de poivrons et de tomates ainsi que du miel. Laissez mijoter pendant une bonne heure \u00e0 feu doux, au couvert, et ne n\u00e9gligez pas d&rsquo;y ajouter du bouillon ou de l&rsquo;eau. <\/p>\n<p><\/p>\n<p>A la fin de la cuisson, vous pouvez enfourner les poireaux pendant une dizaine de minutes pour qu&rsquo;ils prennent une belle couleur. Servez parsem\u00e9 de persil et avec une bonne cuiller\u00e9e de cr\u00e8me fra\u00eeche. C\u00f4t\u00e9 vins, le grand auteur de livres de gastronomie roumaine Radu Anton Roman pr\u00e9voyait un vin de Moldavie et pas d&rsquo;Olt\u00e9nie, car les origines des poireaux farcis seraient \u00e0 retrouver dans cette r\u00e9gion de l&rsquo;est de la Roumanie. Cherchez donc une Galbena de Odobesti, un blanc l\u00e9ger tr\u00e8s r\u00e9pandu en Roumanie, sinon un ros\u00e9 tout aussi l\u00e9ger.
