C&rsquo;est en m\u00eame temps un v\u00e9ritable d\u00e9fi puisque cette brioche est servie normalement en dessert \u00e0 la fin d&rsquo;un repas d\u00e9j\u00e0 assez copieux. Mais on ne refuse jamais une ou deux tranches de cozonac plein de noix et de cacao. De nos jours, les cozonaci abondent dans les supermarch\u00e9s roumains et dans les p\u00e2tisseries artisanales. Et pourtant, malgr\u00e9 cette offre pl\u00e9thorique, pr\u00e9parer ses propres cozonaci pour No\u00ebl est une activit\u00e9 avec un charme \u00e0 part qui s&rsquo;\u00e9tend sur plusieurs heures, voire jours. <\/p>\n<p><\/p>\n<p>C\u00f4t\u00e9 ingr\u00e9dients, il vous faut : 1 kilo de farine, 7 jaunes d&rsquo;\u0153uf, 4 blancs d&rsquo;\u0153uf, 1 grande tasse de sucre, 200 grammes de beurre, 2 cuiller\u00e9es d&rsquo;huile, 1 cuiller\u00e9e de rhum, 50 gramme de levure, sucre vanill\u00e9, sucr\u00e9 glac\u00e9, noix, raisins secs, noisettes, loukoum, un peu de sel, un demi litre de lait. D\u00e9layer la  levure dans un verre de lait ti\u00e8de avec une cuiller\u00e9e de sucre. Dans un grand bol mettez trois cuiller\u00e9es de farine et les \u00e9bouillanter avec un verre de lait. Bien m\u00e9langer pour \u00e9viter les grumeaux. <\/p>\n<p><\/p>\n<p>Quand ce m\u00e9lange a refroidi, ajouter la levure et p\u00e9trir vigoureusement. Saupoudrer de farine et laisser reposer pour qu&rsquo;elle prenne de volume. Travailler les jaunes d&rsquo;\u0153uf avec un peu de sel d&rsquo;abord, puis avec le sucre, jusqu&rsquo;\u00e0 la consistance d&rsquo;une cr\u00e8me mousseuse. Battre les blancs en neige. Faites fondre le beurre. Une fois que la levure est mont\u00e9e, p\u00e9trir la p\u00e2te avec la farine qui reste, les jaunes d&rsquo;\u0153uf, un verre de lait ti\u00e8de puis les blancs d&rsquo;\u0153uf, pendant une bonne demi-heure. Quand la p\u00e2te a pris forme, ajouter l&rsquo;huile, le sucr vanill\u00e9 et petit \u00e0 petit le beurre fondu. Si la p\u00e2te est trop ferme, ajoutez du lait pour la ramollir. Laissez la p\u00e2te lever deux \u00e0 trois heures \u00e0 chaleur s\u00e8che. Beurrer les moules \u00e0 brioche. Les remplir de p\u00e2te \u00e0 moiti\u00e9. <\/p>\n<p><\/p>\n<p>Petit conseil technique : huilez vos mains pour pouvoir manipuler la p\u00e2te. On peut leur donner une forme allong\u00e9e, en faire des tresses. En Valachie, les formes sont toujours rectangulaires, alors qu&rsquo;en Moldavie elles sont rondes. Laisser lever encore environ une demi-heure, les badigeonner de jaune d&rsquo;\u0153uf et les parsemez de noix, raisins secs, noisettes, loukoum et enfournez \u00e0 feu moyen, voire doux pendant environ une heure.
