Comme d&rsquo;habitude, je profite du fait que chef Alex est sorti de sa cuisine pour m&rsquo;infiltrer \u00e0 sa place et vous inviter \u00e0 d\u00e9guster un d\u00e9licieux g\u00e2teau aux cerises aigres. Avant de dresser la liste des ingr\u00e9dients, je voudrais pr\u00e9ciser d\u00e8s le d\u00e9part que si vous n&rsquo;avez pas la possibilit\u00e9 de trouver des cerises aigres fra\u00eeches, pas de souci, vous pouvez les remplacer par des cerises en bo\u00eete ou m\u00eame surgel\u00e9es. D&rsquo;ailleurs, la recette peut tr\u00e8s bien se faire avec d&rsquo;autres fruits, tels abricots, prunes ou fraises. A vous de choisir.  <\/p>\n<p><\/p>\n<p>Pour les ingr\u00e9dients, il vous faudra : 4 \u0153ufs, 200 grammes de sucre, 200 grammes de farine, 250 grammes de beurre fondu que vous pouvez remplacer par 250 ml d&rsquo;huile de tournesol, 40 grammes de cacao en poudre, une cuiller\u00e9e \u00e0 caf\u00e9 d&rsquo;extrait de vanille et une autre d&rsquo;essence de rhum, un sachet de levure, une pinc\u00e9e de sel et environ 300 grammes de cerises aigres d\u00e9noyaut\u00e9es. Il convient de sortir les \u0153ufs du frigo un peu \u00e0 l&rsquo;avance afin qu&rsquo;ils soient \u00e0 temp\u00e9rature ambiante. Allumer le four \u00e0 180\u00b0. <\/p>\n<p><\/p>\n<p>Dans un bol, commencer par s\u00e9parer les jaunes des blancs et fouetter les jaunes avec le sucre jusqu&rsquo;\u00e0 ce que le m\u00e9lange blanchisse. Y ajouter l&rsquo;extrait de vanille et continuer \u00e0 fouetter une bonne dizaine de minutes afin que le sucre fonde enti\u00e8rement. Sur le feu, faire fondre le beurre, le laisser refroidir un tout petit peu avant de le rajouter au m\u00e9lange jaunes d&rsquo;\u0153ufs &#8211; sucre &#8211; vanille. <\/p>\n<p><\/p>\n<p>Dans un autre bol, m\u00e9langer la farine, le sel et la levure. Commencer \u00e0 ajouter progressivement la farine au m\u00e9lange \u0153ufs-sucre-beurre jusqu&rsquo;\u00e0 ce que toute la quantit\u00e9 de farine soit incorpor\u00e9e. Ne vous inqui\u00e9tez pas  si le r\u00e9sultat a la consistance d&rsquo;une p\u00e2te. Dans un cul de poule, battre les blancs en neige et les rajouter \u00e0 la p\u00e2te, en m\u00e9langeant soigneusement du haut vers le bas. Le m\u00e9lange final, on le divisera en deux r\u00e9cipients. Dans le premier, on ajoute le cacao et l&rsquo;essence de rhum. <\/p>\n<p><\/p>\n<p>Dans un moule de 20 \u00e0 22 centim\u00e8tres de diam\u00e8tre, verser la p\u00e2te sans cacao, ensuite celle avec le cacao et \u00e0 la fin, disposer sur toute la surface du g\u00e2teau les cerises aigres d\u00e9noyaut\u00e9es et \u00e9goutt\u00e9es au pr\u00e9alable dans une passoire. Enfourner le g\u00e2teau pendant une quarantaine de minutes et le servir ti\u00e8de ou l\u00e9g\u00e8rement refroidi, saupoudr\u00e9 de sucre glace. Bon app\u00e9tit ! (trad.
