Si vous avez \u00e9cout\u00e9 le RRI Sp\u00e9cial cuisine que notre r\u00e9daction \u00e0 r\u00e9aliser \u00e0 l&rsquo;occasion des P\u00e2ques orthodoxes, alors vous avez eu l&rsquo;occasion de d\u00e9couvrir ma recette de cozonac. Une p\u00e2te brioch\u00e9e pour laquelle j&rsquo;ai utilis\u00e9 10 jaunes d&rsquo;\u0153ufs. Eh bien, puisque personne n&rsquo;aime le g\u00e2chis, la question qui se pose c&rsquo;est quoi faire avec une dizaine de blancs d&rsquo;\u0153ufs ? La r\u00e9ponse toute de suite, quand je vais m&rsquo;activer dans ma cuisine pour pr\u00e9parer un cake anglais fourr\u00e9 de fruits confits. <\/p>\n<p><\/p>\n<p>Alors, comme d&rsquo;habitude, commen\u00e7ons par dresser la liste des ingr\u00e9dients : \u00e0 part les 10 blancs, il vous faudra aussi 2 pinc\u00e9es de sel, 200 grammes de sucre, 3 sachets de sucre vanill\u00e9, un peu de zeste de citron r\u00e2p\u00e9, 250 grammes de beurre fondu, 200 grammes de farine et 400 grammes d&rsquo;un m\u00e9lange de noix, concass\u00e9es et l\u00e9g\u00e8rement grill\u00e9es pour relever leur go\u00fbt,  raisins secs, petits morceaux d&rsquo;\u00e9corce d&rsquo;orange confits, p\u00e9pites de chocolat noir et fruits secs coup\u00e9s en brunoise. Premier pas : pr\u00e9chauffer le four \u00e0 170 et pr\u00e9parer deux moules \u00e0 cake chemis\u00e9s de papier cuisson. Faire fondre le beurre sur feu doux et, hors du feu, y ajouter le zeste de citron r\u00e2p\u00e9. M\u00e9langer. <\/p>\n<p><\/p>\n<p>Dans un cul de poule bien nettoy\u00e9 et sans aucune trace de graisse ou d&rsquo;humidit\u00e9, battre en neige \u00e0 la main ou au fouet \u00e9lectrique les blancs d&rsquo;\u0153ufs, avec une pinc\u00e9e de sel. Y ajouter le sucre et continuer \u00e0 fouetter jusqu&rsquo;\u00e0 obtenir un m\u00e9lange lisse et translucide comme pour la meringue. Verser d&rsquo;un coup tous les ingr\u00e9dients, \u00e0 savoir la farine tamis\u00e9e, les noix concass\u00e9es, les petits bouts de fruits secs et les petits morceaux de chocolat, et m\u00e9langer d\u00e9licatement. Ajouter en dernier la moiti\u00e9 du beurre fondu aromatis\u00e9 au citron. Il est tr\u00e8s important d&rsquo;ajouter tous les ingr\u00e9dients secs d&rsquo;un coup, car sinon, \u00e0 force de m\u00e9langer par \u00e9tape, les blancs battus en neige perdent leur consistance et deviennent liquides. A la fin, incorporer le reste du beurre et continuer \u00e0 m\u00e9langer d\u00e9licatement \u00e0 l&rsquo;aide d&rsquo;une cuill\u00e8re en bois. <\/p>\n<p><\/p>\n<p>Verser le m\u00e9lange ainsi obtenu dans les deux moules. Normalement, les quantit\u00e9s indiqu\u00e9es devraient vous suffire pour deux cakes. Si le moule est plus grand, alors vous allez vous contenter d&rsquo;un seul cake anglais. Enfourner \u00e0 170 degr\u00e9s et surtout ne pas ouvrir le four pendant les premi\u00e8res 25 minutes. Ult\u00e9rieurement, vous pouvez faire le test de la cure &#8211; dent pour v\u00e9rifier la cuisson. Au bout d&rsquo;une quarantaine de minutes, en fonction du four, le cake devrait \u00eatre cuit. Si la cure- dent garde des traces de p\u00e2te, prolonger la cuisson encore quelques minutes. Attention, si le cake commence \u00e0 avoir une belle couleur, mais qu&rsquo;\u00e0 l&rsquo;int\u00e9rieur il n&rsquo;ait pas l&rsquo;air cuit, couvrez-le du papier cuisson que vous fixez sur les bords avec des cure-dents et prolonger la cuisson.<\/p>\n<p><\/p>\n<p>Quoiqu&rsquo;il en soit, au bout d&rsquo;une heure, vous devriez avoir un magnifique cake aux fruits secs et une odeur citronn\u00e9e dans votre cuisine.
