Durant la seconde moiti\u00e9 de l&rsquo;\u00e9t\u00e9 et vers le d\u00e9but de l&rsquo;automne, les tomates sont \u00e0 l&rsquo;apog\u00e9e. Tout roumain, grec et italien vous le confirmera : la tomate va \u00e0 merveille avec le fromage en saumure  telemea, feta et respectivement  mozzarella. D&rsquo;ailleurs la salade de l\u00e9gumes : tomate, concombre, poivrons, oignons au fromage ou tout simplement tomate-fromage est une constante de la cuisine estivale. Une autre constante de la cuisine du sud de l&rsquo;Europe est l&rsquo;association tomate &#8211; huile d&rsquo;olive &#8211; basilic. <\/p>\n<p><\/p>\n<p>Aujourd&rsquo;hui, je vous propose un petit plat qui utilise pleinement ces \u00e9l\u00e9ments : c&rsquo;est un plat enfourn\u00e9 \u00e0 base tomates, fromage et olives. Donc il vous faut des tomates de diff\u00e9rents types : c\u0153ur de b\u0153uf, cerise, rose, jaune, mauve etc, une bonne tranche de fromage de brebis du type telemea, similaire au feta grec, quelques olives, quelques filets d&rsquo;anchois, de l&rsquo;ail et une belle botte de basilic. D&rsquo;abord il faut peler les tomates. Pour cela faites une coupure en crois sur le bout d&rsquo;une tomate et plongez-la dans de l&rsquo;eau bouillante avant de la mettre ensuite dans un bol d&rsquo;eau glac\u00e9e. Le r\u00e9sultat de cette op\u00e9ration serait une tomate facile \u00e0 peler. Coupez ensuite les tomates en quartiers ou en rondelles et posez-les dans un plat qui va au four. Salez et poivrez Mettez ensuite le reste des ingr\u00e9dients et \u00e0 la fin posez le fromage en tranches. Parsemez de basilic s\u00e9ch\u00e9 et mettez-y aussi de l&rsquo;huile d&rsquo;olives. <\/p>\n<p><\/p>\n<p>Enfournez le plat pour 25 minutes &#8211; une demi-heure et servez accompagn\u00e9 de pain de campagne.
