Aujourd&rsquo;hui, je voudrais vous proposer un plat hongrois dont le nom -&#13;<br \/>\nSj\u00f6mansgryta &#8211; que malheureusement, j&rsquo;ai du mal \u00e0 prononcer correctement, et&#13;<br \/>\nqui se traduirait par \u00ab Le plat du marin \u00bb. Contrairement \u00e0 ce que ce&#13;<br \/>\nnom indique, il s&rsquo;agit d&rsquo;un plat \u00e0 base de veau, et non pas de poisson ou de&#13;<br \/>\nfruits de mer. Il n&rsquo;est pas tr\u00e8s difficile \u00e0 faire, mais, ce n&rsquo;est pas non plus&#13;<br \/>\nune recette rapide. Pour le pr\u00e9parer, il vous faut environ deux heures. <\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Commen\u00e7ons par dresser la liste de nos ingr\u00e9dients. Pour&#13;<br \/>\nquatre personnes, pr\u00e9voir un beau morceau de veau de quelque 500 grammes,&#13;<br \/>\nd\u00e9coup\u00e9 en tranches d&rsquo;un centim\u00e8tre d&rsquo;\u00e9paisseur. Il vous faut aussi deux&#13;<br \/>\noignons, 200 ml de bi\u00e8re noire, 400 ml d&rsquo;eau, un cube de fond de veau, quelques&#13;<br \/>\nfeuilles de laurier, sel, poivre, huile, deux-trois carottes, une botte de&#13;<br \/>\npersil et quelques pommes de terre en accompagnement. Pour la sauce, pr\u00e9voyez&#13;<br \/>\naussi une cuiller\u00e9e \u00e0 soupe de farine et une autre de moutarde.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Premier pas : hacher menu les deux oignons et couper&#13;<br \/>\nen fines rondelles les carottes. Dans une po\u00eale \u00e0 feu vif, r\u00e9chauffer un peu&#13;<br \/>\nd&rsquo;huile et faire revenir les l\u00e9gumes, en m\u00e9langeant constamment \u00e0 l&rsquo;aide d&rsquo;une&#13;<br \/>\ncuill\u00e8re en bois. Au bout de quelques minutes, les retirer et les r\u00e9server au&#13;<br \/>\nchaud. Enrober d&rsquo;un peu de farine les tranches de viande afin qu&rsquo;elles ne&#13;<br \/>\ncollent pas au fond de la po\u00eale et les saisir \u00e0 feu vif, des deux c\u00f4t\u00e9s, dans&#13;<br \/>\nla m\u00eame po\u00eale o\u00f9 vous aurez ajout\u00e9 un peu d&rsquo;huile, si n\u00e9cessaire. On laisse les&#13;<br \/>\ntranches de viande sur le feu une quinzaine de minutes, le temps qu&rsquo;elles se colorient&#13;<br \/>\nl\u00e9g\u00e8rement et qu&rsquo;elles perdent un peu de leur jus. A ce moment-l\u00e0, on remet&#13;<br \/>\ndans la po\u00eale les oignons hach\u00e9s menu et les rondelles de carottes, on verse&#13;<br \/>\nles 200 ml de bi\u00e8re noire et les 400 ml d&rsquo;eau, on y ajoute le cube de fond de&#13;<br \/>\nveau, les feuilles de laurier, quelques graines de poivre et, en fonction de&#13;<br \/>\nvos pr\u00e9f\u00e9rences, un peu de thym s\u00e9ch\u00e9. On laisse mijoter \u00e0 feu doux une demi-heure&#13;<br \/>\navant de verser le tout dans un plat allant au four et de prolonger la cuisson&#13;<br \/>\n\u00e0 180 degr\u00e9s pour une heure, voire une heure et demie, le temps que la viande&#13;<br \/>\ndevienne tendre et se coupe facilement \u00e0 la fourchette.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>A la fin, retirer les tranches de viande et les l\u00e9gumes de&#13;<br \/>\nla sauce et y ajouter une cuiller\u00e9e \u00e0 soupe de farine et une autre de moutarde.&#13;<br \/>\nRemettre sur feu et m\u00e9langer \u00e0 l&rsquo;aide d&rsquo;une cuill\u00e8re en bois jusqu&rsquo;\u00e0 ce que la&#13;<br \/>\nsauce \u00e9paississe. R\u00e9server.<\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Occupons-nous maintenant des pommes de terre. Pelez-les&#13;<br \/>\nd\u00e9licatement et rincez-les \u00e0 l&rsquo;eau froide. Versez de l&rsquo;eau dans une cocotte&#13;<br \/>\njusqu&rsquo;\u00e0 3 cm de hauteur. Posez un panier vapeur en inox au-dessus de l&rsquo;eau.&#13;<br \/>\nPlacez les pommes de terre dedans. Ajoutez le gros sel. Fermez la cocotte et laissez&#13;<br \/>\nbouillir 30 min pour que les pommes de terre soient bien tendres. <\/p>\n<p>Pour un plat plus l\u00e9ger, vous pouvez optez en accompagnement pour du riz. C&rsquo;est ce que moi j&rsquo;ai fait. <\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Dans une assiette, d\u00e9posez une tranche de viande et&#13;<br \/>\nquelques cuiller\u00e9es \u00e0 soupe de l\u00e9gumes, nappez-la g\u00e9n\u00e9reusement de sauce, avec&#13;<br \/>\nquelques pommes de terre vapeur \u00e0 c\u00f4t\u00e9 ou du riz. Parsemez d&rsquo;un peu de persil et servez&#13;<br \/>\naussit\u00f4t.
