Et pourtant depuis plusieurs ann\u00e9es, l&rsquo;arriv\u00e9e des l\u00e9gumes surgel\u00e9s a rendu ce plat plus accessible.  A la base de mon \u00ab ghiveci \u00bb reposent les l\u00e9gumes racines : 2 carottes, 1 c\u00e9leri-rave, 2 panais, 5 pommes de terre. Evidemment il faut aussi quelques oignons, quatre ou cinq environ. J&rsquo;ai ajout\u00e9 aussi deux petites courgettes, quelques fleurettes de chou-fleur, cent grammes de petits pois et deux poivrons rouges. Il faut pr\u00e9voir aussi quelques tomates, ou bien une canette de tomates hach\u00e9es, enfin 300 grammes de coulis de tomates fera aussi l&rsquo;affaire. <\/p>\n<p><\/p>\n<p>La liste des l\u00e9gumes restera ouverte et vous pourriez ajouter aussi des aubergines, des betteraves ou bien du chou. Lavez les l\u00e9gumes et coupez-les  en paysanne, moi j&rsquo;ai choisi des rondelles ou en quartiers d&rsquo;environ deux ou trois centim\u00e8tres. Commencez par faire dorer les l\u00e9gumes racines (carottes, pomme de terre, panais, c\u00e9leri-rave) dans une cocotte en fonde qui peut aller aussi au four. Puis ajoutez les oignons, ensuite les petits-pois et \u00e0 la fin les courgettes, le chou-fleur et les poivrons afin de ne pas les \u00e9craser. C&rsquo;est le moment de mettre les herbes et en ce cas j&rsquo;ai choisi le romarin et le basilic. Mettez aussi les tomates ou bien le coulis de tomates et m\u00e9langez, en faisant attention \u00e0 ne pas \u00e9craser les l\u00e9gumes. <\/p>\n<p><\/p>\n<p>Recouvrez d&rsquo;eau et laissez mijoter \u00e0 feu l\u00e9ger au couvert pendant une trentaine de minutes, avant de mettre au four pendant une demi-heure. Faites attention \u00e0 ne pas bruler les l\u00e9gumes et notamment le chou-fleur. Entre temps, pr\u00e9parez un m\u00e9lange d&rsquo;huile d&rsquo;olives, d&rsquo;ail \u00e9cras\u00e9, de persil et de jus de citron. Sortez le ghiveci du four et avant de servir versez ce m\u00e9lange qui donnera un contrepoids assez int\u00e9ressant au plat. Les parfums seront vraiment uniques.
