Le coup d&rsquo;envoi des pr\u00e9paratifs&#13;<br \/>\nculinaires \u00e9tait la f\u00eate de l&rsquo;Ignat, le 20 d\u00e9cembre, le jour quand dans les&#13;<br \/>\nfoyers \u00e0 la campagne le cochon \u00e9tait tu\u00e9 et partag\u00e9 pour \u00eatre transform\u00e9 en&#13;<br \/>\nplats phare : sarmale, t\u00eate en aspic, boudin, lard fum\u00e9, saucisses et&#13;<br \/>\nainsi de suite. D&rsquo;autres parties du cochon et certaines sp\u00e9cialit\u00e9s  sont conserv\u00e9es par fumage ou bien dans&#13;<br \/>\ndu saindoux selon la technique du confit. <\/p>\n<p><\/p>\n<p>&#13;<br \/>\n&#13;<\/p>\n<p>Apr\u00e8s une longue et fatigante journ\u00e9e de travail, les participants \u00e0 cette&#13;<br \/>\nop\u00e9ration arros\u00e9e pleinement d&rsquo;eau de vie chaude (question de se r\u00e9chauffer, vu&#13;<br \/>\nque la d\u00e9coupe se d\u00e9roule en plein air, en hiver) sont r\u00e9compens\u00e9s d&rsquo;un plat&#13;<br \/>\nsimple mais extr\u00eamement savoureux. Il faut mettre de c\u00f4t\u00e9 quelques morceaux de&#13;<br \/>\nviande avec du gras, des lardons, mais aussi quelques pi\u00e8ces de foie.  La recette n&rsquo;est pas du tout difficile, mais&#13;<br \/>\nil vous faut certains ustensiles de cuisine tr\u00e8s particuliers. Il vous faut une&#13;<br \/>\ncocotte \u00e9paisse en fonte et une grosse cuill\u00e8re en bois. Mettez les morceaux&#13;<br \/>\ndans la cocotte et versez quelques 200 millilitres d&rsquo;eau \u00e0 feu moyen. Alors que&#13;<br \/>\nl&rsquo;eau s&rsquo;\u00e9vapore peu \u00e0 peu, le saindoux se forme et les morceaux de viande&#13;<br \/>\ncommencent \u00e0 prendre une belle couleur dor\u00e9e. Vous pouvez ajouter aussi du thym&#13;<br \/>\ns\u00e9ch\u00e9, salez et poivrez. <\/p>\n<p><\/p>\n<p>Entre temps vous devez pr\u00e9parer une belle polenta.&#13;<br \/>\nFaites bouillir de l&rsquo;eau sal\u00e9e dans une cocotte et ajoutez de la semoule de&#13;<br \/>\nma\u00efs en pluie tout en remuant \u00e9nergiquement avec un fouet. Laissez cuire \u00e0 feu&#13;<br \/>\ndoux jusqu&rsquo;\u00e0 ce que la polenta est pr\u00eate, soit une demi-heure environ si vous&#13;<br \/>\nutilisez de la semoule de ma\u00efs que l&rsquo;on retrouve dans le supermarch\u00e9. Dans une&#13;<br \/>\nassiette posez une boule de polenta, puis quelques morceaux de viande et une&#13;<br \/>\nbelle cuiller\u00e9e de gras fondu. Il  faut&#13;<br \/>\nabsolument ajouter g\u00e9n\u00e9reusement de l&rsquo;ail \u00e9cras\u00e9. Pr\u00e9voyez \u00e9galement des&#13;<br \/>\nl\u00e9gumes en saumure : cornichons, tomates vertes et chou-fleur.
