Il existe d&rsquo;innombrables variantes et toute sorte de d\u00e9clinaisons, mais les principaux ingr\u00e9dients demeurent les m\u00eames. Il vous faut donc : un kilo de viande de porc &#8211; \u00e9paule ou jambon -, quelques 200 grammes de lardons fum\u00e9s, beaucoup d&rsquo;oignons (4 ou 5), des poivrons rouges (5 ou 6), 3 carottes, un kilo de pommes de terre, deux ou trois bo\u00eetes de coulis de tomates, de la cr\u00e8me de poivrons, du paprika doux et fort, ainsi que du paprika fum\u00e9.  <\/p>\n<p><\/p>\n<p>Commencez par d\u00e9couper la viande en morceaux d&rsquo;environ deux ou trois centim\u00e8tres et faites-les dorer dans un peu de saindoux. Vous pouvez \u00e9galement utiliser de l&rsquo;huile si vous voulez r\u00e9duire la quantit\u00e9 de graisses. Retirez les morceaux de viande et dans la m\u00eame casserole faites fondre les lardons fum\u00e9s puis faites suer les l\u00e9gumes : oignons et poivrons coup\u00e9s en julienne et carottes coup\u00e9es en d\u00e9s. Rajouter ensuite la viande et d\u00e9glacer avec du vin rouge. Ajoutez de la cr\u00e8me de poivrons, du paprika, du thym, salez et poivrez. Laissez mijoter \u00e0 feu doux jusqu&rsquo;\u00e0 ce que l&rsquo;alcool s&rsquo;\u00e9vapore et ajoutez les tomates. <\/p>\n<p><\/p>\n<p>Recouvrez d&rsquo;eau si besoin est et laissez cuire deux heures environ, tout en rajoutant de l&rsquo;eau si besoin. Alors que le goulasch est en train de cuire, pr\u00e9parez une sorte de boulettes de farine, similaire aux p\u00e2tes faites maisons r\u00e9pandues dans la r\u00e9gion de montagne d&rsquo;Italie, de Suisse et d&rsquo;Allemagne. Prenez donc un oeuf, et dans un bol m\u00e9langez-le \u00e0 de la farine et p\u00e9trissez-le pour obtenir une p\u00e2te assez ferme. Coupez-la en morceaux d&rsquo;un centim\u00e8tre environ. Versez ces boulettes dans la casserole tout en y ajoutant de l&rsquo;eau. Vous pouvez \u00e9galement remplacer ces boulettes par des pommes de terre ou bien m\u00e9langer les deux. Enfin, c&rsquo;est le moment de pr\u00e9senter le plat. L&rsquo;accompagner de cr\u00e8me fra\u00eeche et de l\u00e9gumes en saumure ou de choucroute.
