Epinards, orties, ail des ours, oseille, arroche, voici autant de plantes qui dominent la cuisine roumaine le printemps et durant la premi\u00e8re moiti\u00e9 de l&rsquo;\u00e9t\u00e9 m\u00eame. Aujourd&rsquo;hui je vous propose de pr\u00e9parer un plat classique de la cuisine roumaine, les \u00e9pinards aux \u0153ufs, mais avec quelques secrets qui ne font qu&rsquo;amplifier les ar\u00f4mes. Il vous faut donc soit un kilo de feuilles d&rsquo;\u00e9pinards soit un sachet d&rsquo;\u00e9pinards surgel\u00e9s que l&rsquo;on trouve dans les supermarch\u00e9s. Il s&rsquo;agit de paquets de 500 \u00e0 700 grammes. Il vous faut aussi un oignon, une carotte, quelques cuiller\u00e9es d&rsquo;huile, de l&rsquo;ail et 200 ml de cr\u00e8me. <\/p>\n<p><\/p>\n<p>Dans le cas des \u00e9pinards frais, il faut les bien laver, enlever les feuilles jaun\u00e2tres et faites-les blanchir dans de l&rsquo;eau en \u00e9bullition. Puis mettez les \u00e9pinards dans un bol avec de l&rsquo;eau glac\u00e9e avant de les laisser reposer dans une passoire. Ensuite, dans une po\u00eale antiadh\u00e9sive, faites suer les oignons et la carotte coup\u00e9es en brunoise. Puis ajoutez les \u00e9pinards et m\u00e9langez le tout. Les \u00e9pinards en surgel\u00e9 doivent \u00eatre laiss\u00e9es dans une passoire pour qu&rsquo;ils d\u00e9g\u00e8lent tranquillement avant de les utiliser. Apr\u00e8s deux minutes de cuisson environ, \u00e0 feu doux, au couvert, ajoutez l&rsquo;ail \u00e9cras\u00e9 et la cr\u00e8me et  laissez mijoter \u00e0 feu extr\u00eamement doux pendant deux autres minutes. Salez et poivrez. Les \u00e9pinards pr\u00e9par\u00e9s de cette mani\u00e8re s&rsquo;accompagnent \u00e0 merveille de quelques \u0153ufs \u00e0 plat. Vous pouvez enrichir davantage cette recette en  ajoutant aux \u0153ufs du fromage r\u00e2p\u00e9 du genre \u00ab cascaval \u00bb. <\/p>\n<p><\/p>\n<p>Mais vu que c&rsquo;est une p\u00e9riode de car\u00eame avant P\u00e2que, il y a aussi  une version v\u00e9g\u00e9tarienne de la m\u00eame recette. Pour l&rsquo;enrichir, il faut ajouter un peu de farine lorsqu&rsquo;on fait suer les oignons et les carottes. Puis ajoutez progressivement de l&rsquo;eau dans laquelle ont bouilli les feuilles d&rsquo;\u00e9pinards pour obtenir une sauce onctueuse. C&rsquo;est dans cette sauce que l&rsquo;on doit ajouter les \u00e9pinards blanchis, entiers ou bien finement hach\u00e9s, c&rsquo;est \u00e0 vous de choisir. A ne pas oublier de mettre de l&rsquo;ail \u00e9cras\u00e9 \u00e0 la fin de la cuisson.
