Je vous propose pour cette \u00e9dition de pr\u00e9parer un plat d&rsquo;origine grecque, mais pr\u00e9sent aussi dans la cuisine roumaine : les \u00e9pinards au riz.<\/p>\n<p>&nbsp;<\/p>\n<p>En effet, \u00e9tant donn\u00e9 sa position g\u00e9ographique, l&rsquo;espace roumain a \u00e9t\u00e9 influenc\u00e9 fortement par les diff\u00e9rentes cultures et civilisations qui s&rsquo;y croisaient. Une de ces cultures a \u00e9t\u00e9 celle grecque qui a influenc\u00e9 elle aussi la cuisine roumaine. Les \u00e9pinards, on les utilise souvent dans la pr\u00e9paration d&rsquo;une sorte de pur\u00e9e, aromatis\u00e9e \u00e0 l&rsquo;ail et enrichie de cr\u00e8me fraiche ou de b\u00e9chamel et accompagn\u00e9 d&rsquo;\u0153ufs poch\u00e9s.<\/p>\n<p>&nbsp;<\/p>\n<p>Mais aujourd&rsquo;hui je vous propose de pr\u00e9parer un riz aux \u00e9pinards, une recette v\u00e9g\u00e9tarienne que l&rsquo;on peut pr\u00e9parer aussi durant les car\u00eames qui pr\u00e9c\u00e8dent les f\u00eates orthodoxes. C\u00f4t\u00e9 ingr\u00e9dients il vous faut un demi-kilo d&rsquo;\u00e9pinards frais, lav\u00e9s ou bien un sachet d&rsquo;\u00e9pinards surgel\u00e9s, le jus d&rsquo;un demi-citron, un oignon et deux ou trois oignons verts, une botte d&rsquo;aneth, cent grammes de riz et \u00e9ventuellement du coulis de tomates. Commencez par hacher finement l&rsquo;oignon et les oignons verts et les faire sauter dans une po\u00eale antiadh\u00e9sive. Entre temps, les \u00e9pinards il faut les faire blanchir dans de l&rsquo;eau en \u00e9bullition s&rsquo;il s&rsquo;agit d&rsquo;\u00e9pinards frais. Faites-les s\u00e9cher dans une passoire avant de les couper grossi\u00e8rement. Si vous utilisez des \u00e9pinards surgel\u00e9s, il faut tout simplement les d\u00e9congeler. Une fois les oignons bien dor\u00e9s, il faut ajouter le riz, m\u00e9langer bien, avant d&rsquo;y mettre aussi les \u00e9pinards.<\/p>\n<p>&nbsp;<\/p>\n<p>C&rsquo;est aussi le moment d&rsquo;ajouter du coulis de tomates. Recouvrez d&rsquo;eau et faites bouillir jusqu&rsquo;\u00e0 ce que le riz est bien cuit, en fonction du riz utilis\u00e9. Normalement, cette \u00e9tape s&rsquo;\u00e9tend sur pas plus d&rsquo;une demi-heure, m\u00eame moins. Ajoutez de l&rsquo;ail \u00e9crase, de l&rsquo;aneth et du jus de citron. Et voil\u00e0 que vos \u00e9pinards aux riz sont pr\u00eats \u00e0 \u00eatre d\u00e9gust\u00e9s, chauds ou froids en entr\u00e9e ou bien en accompagnements de diff\u00e9rents r\u00f4tis. Vous pouvez \u00e9videmment enrichir le plat en utilisant de saindoux au lieu de l&rsquo;huile d&rsquo;olives et aussi de la cr\u00e8me. En Gr\u00e8ce on y ajoute aussi du fromage feta \u00e9cras\u00e9.
