Les aubergines comptent parmi les principaux rep\u00e8res de la cuisine estivale roumaine, aux c\u00f4t\u00e9s des tomates, des poivrons, des cornichons, des courgettes et ainsi de suite. On les utilise surtout pour les griller enti\u00e8res, pour faire des moussakas ou bien pour tout sorte de ragouts. Aujourd&rsquo;hui je vous propos\u00e9 un plat simple \u00e0 pr\u00e9parer, qui se retrouve aussi dans la gastronomie d&rsquo;autres pays de la r\u00e9gion et m\u00eame dans celle des pays du bassin m\u00e9diterran\u00e9en. <\/p>\n<p><\/p>\n<p>C&rsquo;est tr\u00e8s savoureux et c&rsquo;est m\u00eame tr\u00e8s beau \u00e0 admirer : les aubergines en \u00e9ventail. Bref, il s&rsquo;agit d&rsquo;aubergines fourr\u00e9es de tomates, oignons, poivrons, fromage et m\u00eame jambon et cuites au four. Mais il y a toujours des d\u00e9tails \u00e0 retenir et de petites astuces \u00e0 effectuer pour que le succ\u00e8s soit garanti. Commen\u00e7ons par l&rsquo;ingr\u00e9dient principal : les aubergines qui doivent \u00eatre frais, jeunes et pas trop grandes. On les lave et puis on les d\u00e9coupe dans la longueur en tranches de moins d&rsquo;un centim\u00e8tre d&rsquo;\u00e9paisseur pour obtenir un \u00e9ventail.  Attention \u00e0 ne pas aller jusqu&rsquo;au bout.  Il faut un couteau qui coupe bien pour faire des tranches peu \u00e9paisses. <\/p>\n<p><\/p>\n<p>Autres ingr\u00e9dients : une tomate moyenne et un petit oignon pour chaque aubergine, un ou deux poivrons, quelques tranches fines de jambon, du fromage soit du \u00ab cascaval \u00bb, une sorte de gruy\u00e8re roumaine soit du fromage dit \u00ab burduf \u00bb, un fromage \u00e0 p\u00e2te press\u00e9, sal\u00e9 et au go\u00fbt tr\u00e8s sp\u00e9cifique. Il vous faut une canette de tomates hach\u00e9es ou du coulis de tomates pour quatre aubergines, une botte de persil et de l&rsquo;ail. Apr\u00e8s avoir d\u00e9coup\u00e9 les aubergines, salez chacune des tranches obtenues et huilez-les avec de l&rsquo;huile d&rsquo;olives m\u00e9lang\u00e9e \u00e0 du romarin. <\/p>\n<p><\/p>\n<p>Coupez les tomates, les poivrons et les oignons en tranches assez fines et commencez \u00e0 les poser dans les aubergines en \u00e9ventail, en alternant l\u00e9gumes, fromage et jambon. Vous pouvez aussi renoncer au jambon si vous souhaitez obtenir un plat plus l\u00e9ger. De toute fa\u00e7on il faut aussi ajouter l&rsquo;ail \u00e9cras\u00e9, recouvrir de coulis de tomates et d&rsquo;huile d&rsquo;olives en abondance. Enfournez dans le four pr\u00e9chauff\u00e9 \u00e0 200 degr\u00e9s pour une demi-heure, voir 40 minutes. Servez chaud en tant qu&rsquo;accompagnement, recouvert de yaourt grec et de persil finement hach\u00e9  ou bien froid en entr\u00e9e.
