Le ragout de pommes de terre est une sp\u00e9cialit\u00e9 assez r\u00e9pandue \u00e0<br \/>\ntravers le pays, un plat sp\u00e9cifique \u00e0 la cuisine traditionnelle, paysanne, que<br \/>\nl&rsquo;on peut toujours rencontrer sur les tables des familles citadines, modernes.<br \/>\nPour la pr\u00e9parer il vous faut un kilo et demi de pommes de terre, des saucisses<br \/>\nde porc, ou bien des lardons fum\u00e9s ou bien de la viande de porc en confit. Il<br \/>\nvous faut aussi des oignons &#8211; deux ou trois &#8211; un poivron rouge et une carotte.<br \/>\nC\u00f4t\u00e9 herbes et condiments, il vous faut du thym, du paprika, une botte de<br \/>\npersil, sel et poivre du moulin. Il vous faut \u00e9galement quelques 200 ml de<br \/>\ncoulis de tomates ou bien une canette de tomates, mais la pr\u00e9sence des tomates<br \/>\nest tout \u00e0 fait optionnelle. Commencez par peler et couper les pommes de terre<br \/>\nen cubes. Couper en brunoise l&rsquo;oignon et la carotte et en<br \/>\njulienne le poivron. Couper les saucisses en rondelles ou en morceaux plus<br \/>\ngrands et faites-les dorer dans un peu d&rsquo;huile puis ajoutez les oignons et les<br \/>\nautres l\u00e9gumes.<\/p>\n<p>&nbsp;<\/p>\n<p>M\u00e9langez le tout \u00e0 feu doux pendant quelques minutes,<br \/>\navant d&rsquo;ajouter les pommes de terre du coulis de tomates et le thym. Salez et<br \/>\npoivrez, puis recouvrez d&rsquo;eau. Laissez mijoter \u00e0 feu moyen pendant une<br \/>\ndemi-heure environ, jusqu&rsquo;\u00e0 ce que les pommes de terre soient cuites. Coupez le<br \/>\nfeu et laissez reposer pendant une ou deux heures, puisque le go\u00fbt s&rsquo;am\u00e9liore<br \/>\nde cette fa\u00e7on. Ensuite, vous pouvez enfourner avant de servir. N&rsquo;oubliez pas<br \/>\nde parsemer de persil finement hach\u00e9 et d&rsquo;accompagner ce plat d&rsquo;une s\u00e9rie de<br \/>\nl\u00e9gumes en saumure : cornichons, poivrons tomate, tomates vertes, petites<br \/>\npast\u00e8ques, choucroute.
