Personnellement j\u2019aime les f\u00e8ves de grandes dimensions, mais les petits haricots sont \u00e9galement utilisables et assez appr\u00e9ci\u00e9s.<\/p>\n<p>&nbsp;<\/p>\n<h3>Ingr\u00e9dients :<\/h3>\n<p>&nbsp;<\/p>\n<p>Pour environ 300 grammes d\u2019haricots blancs secs, il vous faut 200 grammes de lardons fum\u00e9s, un oignon, une carotte, un panais, un petit c\u00e9leri rave, un poivron rouge, 300 grammes de tomates hach\u00e9es, ou bien une ou deux cannettes de coulis de tomates, une botte de persil, un demi litre de bors, sel et poivre.<\/p>\n<p>&nbsp;<\/p>\n<blockquote><p>Le bors est un condiment sp\u00e9cifique de cette partie de l\u2019Europe, obtenu par la fermentation du son de bl\u00e9. Le bortsch peut \u00eatre pr\u00e9par\u00e9 \u00e0 la maison, mais comme sa pr\u00e9paration est fastidieuse, on peut en trouver dans les magasins, mis en bouteille ou en sachet d\u00e9shydrat\u00e9.<\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<p>Laissez les haricots blancs secs dans de l&rsquo;eau pendant plusieurs heures ou bien pendant une nuit. Puis dans de l&rsquo;eau sal\u00e9e portez les haricots blancs \u00e0 l&rsquo;\u00e9bullition, ensuite jetez l&rsquo;eau et mettez-les bouillir \u00e0 nouveau. R\u00e9p\u00e9tez cette op\u00e9ration \u00e0 deux ou trois reprises, puis laissez bouillir jusqu&rsquo;\u00e0 ce que les haricots soient bien cuits. Entre temps, coupez les lardons fum\u00e9s en d\u00e8s et faites les dorer dans de l&rsquo;huile dans une po\u00eale anti-adh\u00e9sive aux c\u00f4t\u00e9s des carottes coup\u00e9es en brunoise et l&rsquo;oignon coup\u00e9 en julienne. Ajoutez ces ingr\u00e9dients dans la casserole \u00e0 soupe o\u00f9 se trouvent d\u00e9j\u00e0 les haricots. Laissez bouillir \u00e0 feu moyen pendant une autre dizaine de minutes puis ajoutez les tomates et les autres l\u00e9gumes coup\u00e9s en brunoise. Apr\u00e8s une autre demi heure, le persil finement hach\u00e9, de l&rsquo;estragon, salez et poivrez. Versez\u00a0 le bors dans la soupe et coupez le feu apr\u00e8s une autre vingtaine de minutes.<\/p>\n<p>&nbsp;<\/p>\n<blockquote><p>Vous pouvez \u00e9galement pr\u00e9parer une soupe d\u2019haricots en version v\u00e9g\u00e9tarienne, il faut tout simplement ne pas y mettre des lardons.<\/p><\/blockquote>\n<p>Traditionnellement, la soupe d\u2019haricots est servie accompagn\u00e9e d&rsquo;une salade d&rsquo;oignons rouges ou mise dans un bol creus\u00e9 dans un pain &#8211; une astuce locale, tr\u00e8s exploit\u00e9e par les restaurants \u00e0 la cuisine traditionnelle roumaine.
